If it la hot, a light dessert Is Inevitable, and If It 1 cool, a light dessert can be Intro duced ns a contrast to the rest of the dinner. A ready repertoire of desserts, fresh with the tang of summer fruit, with perhaps a light dessert for those who are devotees of la belle chocolate, solves the last course problem for several summertime dinners. Fruited Tapioca. 3 cups water 1-3 cup quick -cooking tapioca cup sugar 4 teaspoon salt to 2 cups crushed fruit 1 to 2 tablespoons lemon Juice. Place water In top of double boiler nnd bring to a boll over direct heat, Combine dry Ingredients; add gradu ally to water and -bring to a brisk boll, stirring constantly. Place im mediately over rapidly boiling water nnd cook S minutes, stirring occa sionally. Cool mixture clears and thickens ns It cools. When slightly cool, fold in fruit (crushed, ground or forced through sieve) and lemon Juice. Oypsy Fruit Mold. 1 packne orange-flavored gelatin 1 pint warm water 3 fresh peachea, sliced 1 cup blueberrlea. Dissolve gelatin In warm water. Pour a thin lnyer Into loaf mold nnd chill until firm. Chill remnln ing gelatin until thickened. Arrange penches on firm l.yei and cover with thickened gelntln. Chill until firm. Add blueb-irrles and cover with remaining gelatin. Chill until firm. Unmold nnd serve In allces. Serves 8. (One cup rnspberrlea may bo substituted for blueberries.) Chocolate Velvet C'renm. 1 square unsweetened chocolate 1 cup milk 1 teaspoon granulated golatln Vt cup augar Vtt teaspoon salt 1 cup heavy crenm 1 cup heavy cream !4 teaspoon vanilla. Add chocolate to cup milk and heat In double boiler. Soak gelatin in remaining cup milk 5 mlnutos. When chocolate Is melted, beat with rotary egg beater until blended. Add gelntln. sugar, and salt, and stir until gelatin Is dissolved. Cool. Add cream and vanilla. Chill until cold and syrupy. Place in bowl of cracked Ice or Ice water and whip with rotary egg beater until fluffy and thick like whipped cream. Turn Into Individual molds. Chill only until firm. Unmold.
