This prevents the vegetables sticking to the kettle which occurs to a slight extent to all vegetables wltftout water. Where butter Is added to the vegetables without water, a slightly browned effect Is produced. Oven cooked meaU are becoming! more and more popular because the economical housewife realizes that less fuel la used when the whole meal Is cooked In the oven at one time. Desserts are frequently a problem, but there need be no lack of variety for custards, puddings, both baked and steamed, and fruit Betty's, may all be cooked at oven dinner temper atures. In planning meals, the dessert should complement the rest of the food. If the main course contains foods high In fat, aa pork roost or baked ham, the dessert should be tart, not rich, in the sense of con taining much fat, and comparatively light and easily digested. Lemon, cherry or rhubarb puddings would fit Into this menu successfully. Pish, because of the characteristic flavor, should be followed by a high ly flavored and crisp dessert, such as an apple Betty made with tart apples or the Escalloped Cranberries. Desaerte, aa custards, bread pud ding and floating Islands, should not t6 used In the same meal with cream ed meats or vegetables, because of the duplication of milk flavors. Steamed puddings can be prepared in the oven when the molds, cither individual or large, are placed In a pan of boiling water which la tightly covered and set In the oven. If the temperature of the oven is maintain ed at 360 degrees P., the foods will be steamed In the same length of time as If they were cooked on the surface unr-J. This method Is not to be recommended unless other foods requiring a long time baking are cooked In the oven att he same time. Man ylndlvldual puddings may be prepared at one time In a roaster, for by placing a perforated divider or wire rack between, two layers of molds can be fitted nicely. WASHINGTON From the stand point of cooking value baking a vege table In Its skin or In a casserole Is the best method, say federal food ex perts. The baking should be slow, with moderate oven heat. Potatoes, aquaah, cucumbers, tomatoes and onions, for example, contain enough water to form steam and keep them moist. The skin holds In the steam. KEEP MEDICINE CABINET BEYOND CHILD'S REACH The medicine cabinet In a house where there are little children should be placed so high that they, cannot reach It even by standing on a chair. It should have a firm catch which they cannot readily learn to manage. The children's tooth brushes and soap and other bathroom necessities should be kept on a little accessible shelf of their own. Table Mats Useful. In many homes table mats and run- ners are being used In place of large table cloths. Borne are gayly colored prints, some plain colors. Mats mads of gingham with bright checks give an air of Informality to the table. If the mats are home-made, select colors and materials which will stand many washings.
