Cabbage Important Food
: More Should Be Eaten

They need a balance to their bread,
meat and potatoei, for example, and
cabbage 1 one of the food that win

Cabbage ha another great virtue;

Creamed cabbage, cabbage salad, ecel
loped cabbage and apple, are dishes
of delicate flavor which appeal to the
most discriminating taate, while corn
ad beef and cabbage, -bam and cab
bage, buttered cabbage, hot slaw and
sauerkraut never lose their popularity.
The cabbage plant grow. In some
farm, almost everywhere In the world,
and ever since the beginning of his
tory has been an Important food.
The common cabbage of our markets
la only one member of the very large
cabbage family; Indeed, It Is only one
of many specie classified by botan
ists as of the genus Brasalca. Broc-
ooll, Brussels sprouts, cauliflower, col
lards, kohlrabi, red cabbage, Chinese
cabbage, Savoy oabbage theae are
only some of the kind of cabbage,
some more abundant or popular than
others. In different parte of the coun
try. .
Both the green cabbage and the
red are good sources of food Iron. Raw
green cabbage Is. also one of the best
sources of three of the vitamins
A. B and O. White cabbage, or the
white center of green cabbage, ha
less iron and less vitamin A, but Is
rich in vitamins B and O. Thus a
salad made of shredded or chopped
green cabbage Is one attractive way
; to use the exceptional food values of
cabbage. To this may be added chop
ped oelery, shredded green pepper, or
thin slices of tart apples. Cold (law,
, If the green leaves are used, la equal
ly good In food value. Shredded raw
oabbage by Itself, or crisp strips 01
cabbage leaves, served In place of
celery stalks, are a still simpler way
to add vitamin and mineral values to
a meal. Again, If there Is no lettuce
at hand for a base for other kinds of
salad, a thin slice of raw oabbage
may be use for this purpose with
for example, grated carrot, diced ap
ple and peanuts, plain potato salad,
tomatoes or other salad vegetable on
top of the slice.
Oabbage la subject, unfortunately,
to a very common abuse. Often It Is
literally "boiled to death." Its vita
min value 1 lost by overcooking, the
mineral salts It contain are largely
cooked out Into the "pot liquor," and
the flavor becomes too "strong." To
retain the most food value and the
tine flavor In cooked oabbage, and
, also to keep the fresh color, the oook
lng time should be short, the cook
ing vessel hould be uncovered, and
all the oooklng liquid ahould be used,
says the Bureau of Home Economics.
It Is the long-time cooking of cab-
' bago, moreover, unnecessary and un
desirable, that fills the house with a
disagreeable cabbage .odor.
' ' "Five-minute oabbage" la a highly
recommended recipe, which at Its
best Is made with cream, but can
be cheapened by using milk, fresh
or evaporated. Scalloped cabbage and
apples, scalloped cabbage and pea
nuts, and panned cabbage are other
attractive ways to serve this useful
vegetable not to mention such ap
pealing combinations as sparerlbs and
sauerkraut.
Red cabbage becomes dark purplish
when cooked, but a little vinegar or
lemon Juloe, added Just before serv
ing, will bring back the original red
color.

Bread and Butter
Milk for all.
Creamed Cabbage.
S cups milk
'1V4 quart finely ahreV1 or chop
ped oabbage, packed
tablespoon flour
tablespoons melted butter
1 teaspoon salt.
Heat the milk and cook the cab
bage In It for S minutes. All the
blended flour and butter and the
alt. Cook for about g minutes
longer and stir constantly. The cab
bam retains Its delicate flavor and
color.
Swedish Cabbage.
1 Medium slued head oabbage (red
or green)
t or I apples
Water
H cup vinegar
9-9 cup sugar
S tablespoons butter or other fat
Salt
Pepper.
Out up the cabbage with the apples
and cook 15 to 90 minutes, or until
tender, In a small quantity of lightly
salted boiling water. If too much
oooklng water 1 left, boll tt down to
half a cup. Add the vinegar, sugar
and fat, and heat for a few minutes.
Pour this sauce over the cabbage and
apple, and let stsnd until the sweet
sour flavor goes all through. Add
salt and pepper to season, and serve
hot.
Csbbage Scalloped with Cheese Mure.
1 Large head cabbage
.1 pint aillk
4 tablespoons butter or other fat
tablespoons fJotfr
1-S to V4 lb. cheese cut In small
pieces
4 teaspoon salt .
Pepper
1 cup bread crumbs.
After the cabbage is washed and
trimmed, out the bead Into sixths or
sights, leaving part of the heart to
hold the leaves together. Cook In
boiling salted water about 90 min
utes, or until Just Under. Drain and
measure the cooking water, adding
enough milk to make a pint , of
liquid. Put the cabbage In a greased
baking dish. Make a sauce of the
liquid, fat and flour. Add the sea
soning and the cheese, and stir un
fc. the cheese Is melted. Four the
cheese sauce over the oabbage and
cover with a layer of crumbs. Bake
In a moderate oven until the crumbs
are brown.
Slaw.
Select a hard head of oabbage, cut
In quarters, and wash thoroughly In
00 id water. Drain, shred, and ast
aslds In a cold place until crisp. Pour
hot dressing over the crisp cabbage
and stir until well mixed. Serve hot
or cold.

gar slowly, stir and continue to cook
until fairly- thick; then add the but
ter or other fat.

reminders of war, which have robbed
him of the ability to acquire home
or money, hope of a comfortable fu
ture for his wife, his five children
and himself.
Through the Interest and untiring
work of the local Red Cross chapter
this hope has come to him.
His story, when It came to the Red
Cross, was a sad but not an unusual
one, Miss Lillian Roberts, executive of
the local chapter, stated yesterday,
For disabled veterans have a way of
becoming discouraged with the neces
sary negotiations and red tape, pre
llmlnary to obtaining compensation.
That la why the Red Cross cares for
many claims cases.
This veteran bad once been on com
pensation, being badly injured In the
war, but as his health seemed to Im
prove he decided the red tape was
too much for him and that he could
get along on 'hla own. A number of
years passed. His family grew to
five. His disability gradually became
aggravated and he was again unable
to work.
Finally after months of worry and
need he wrote to Miss Roberts. Bhe
motored to his home, 40 miles dis
tant, and through the visit realized
that his was a claims case In which
she would undoubtedly be able to aid
The first requisite then became one
of persuading the man to accept hos
pitalisation due him and to co-operate
with the veterans1 administra
tion. Dlacouraged by his former ex
perience and his disability which
acted as a constant Irritation, the
man waa reluctant to try again.
After some time his attitude
changed and the ease waa reopened.
At the end of six months he had re
ceived $1500 in back pay and monthly
compensation of ago a month, which
la doing much today to brighten the
outlook of one who made the great
sacrifice for his country, coming
back from over seae, aans health and
spirit, and that certain amount of
Initiative necessary In accomplishing
even compensation.
Claims caaea are constantly coming
before the Red Cross and constitute
one of the most Important aids given
by th organisation to ex-servloe men.
Through this department veterans are
given something to which they are
entitled. ,but which they often lack
the heart to acquire. -
Through the co-operation of Red
Cross chapters, csaee are traced
through all cities of the nation and
often Into the records of England. As
sistance la gained from many lay
men, Mlas Roberta stated yesterday In
the development of a claims case, as

reau la very necessary to accomplish
ment, but often difficult to the in
jured man, unless he has an ever
willing worker assisting him on the
case.

shootings rose to seven today with
the death of Paul Miller.
Miller, an election officer, waa one
of four men ahot Tuesday In a gun
fight at a polling place at Four Mile.
