3 pounds beans
6 Mips water
3 teaspoons salt
cup molasses ,
!4 cup sugar
1 pound salt pork or bacon
Measure dry beans. Wash thor
oughly. Pour clesn, unsoaked beans
Into a mixing bowl. Add molasses,
salt and sugar. Mis thoroughly. Pour
unsoaked, uncooked beans which
nave ben thoroughly mixed with aug--.r,
molaasea and salt into the Thrift
Cooker ksttlH. Add salt pork or bacon.
Pour S cups of cold water over the
beans, cover and switch to LOW heat
and cook 10-13 hours over night, ,

SPERRY
RECIPES
8 perry Cherry Tarts
cups pitted sour cherries (or 1
Mo. a can)
1 cup boiling water
1 cup sugar for fresh cherries (Va
cup for canned cherries)
1 tbsp. cornstarch
8 small tart shells
cup whipping cream
Drain Juice from cherries. Combine
cherry Juice, boiling water and sugar.
Bring to a boll and strain. (When
using fresh cherries, cook In liquid
for 10 minutes).
Blend the cornstarch to a paste
with a little cold water and stir Into
the hot liquid. Cook over moderate
heat until It thickens, stirring con
tinually. Remove from heat and beat with
rotary egg beater. While mixture Is
still hot pour over cherries. After It
Is cool, fill freshly baked tart ttfiella.
O arnlsh with a fluff of whipped
cream. Serve.
8 perry Honey Nutlets
1 cup shortening
1 cup honey
1 cup brown sugar
4 cups Drifted Snow flour
1 egg
tap. soda. '
1 tap. salt
1 tap. cinnamon
3 cups nuts
Melt shortening, add honey. Mix
well. Then add sugar and beaten
egg and mix well. Sift flour once
before measuring. Then sift flour,
soda, salt and cinnamon together and
add to the creamed mixture.
Add nuts. After Ingredients are
well mixed, drop cooky dough by
small spoonfuls on greased cooky
sheet and bake for 15 minutes In
moderate oven, 850 deg. F. Amount:
4 to 5 dozen cookies.
Sperry Apple Roll
Can be used with many other
canned or freah. fruits and berries.
Wher using canned fruit, drain the
fruit and add the remaining Juice to
your syrup.
4 medium sized apples
1 cups sugar
2 cups water
1 tbsp. butter
Sugar and cinnamon
Peel and core apples and chop fine.
Place sugar and water In a pan two
Inches in depth. Cook 6 minutes
over slow fire.
While the syrup cooks, make up a
rich biscuit dough. Roll dough to Va
Inch In thickness and spread with
chopped apples. Roll Into a long
roll, and cut Into pieces about 1
Inches wide. Place pieces In tbe pan
"f hot syrup. Dot with butter and
sprinkle with sugar and cinnamon.
Bake the apple rolls until apples
are cooked and the crust Is golden
brown. Lift out on to platter and
pour syrup around the rolls. Puffs of
whtppe- cream on top when served
Is delicious.
Time: Bnke 35 minutes In hot oven
460 deg. F, Size of pant 6x13 Inches.
Amount: 13 servings.
Hperrjr Veal Stew (with Dumplings)
lbs. veal for stewing
4 tbsp. Bperry Drifted Snow flour
4 cups water
3 tsp. salt
y4 tsp. pepper
1 bay leaf ,
yA cup chopped onion
4 cups cubed carrots
3 cups green peas
Dredge veal with 3 tbsp. flour and
brown In hot fat. Add water, salt,
pepper, bay leaf and onion. Stew
until tender.
Add carrots last 30 minutes of
cooking. When meat Is tender, re
move bones ' from stew. With re
maining 3 tbsp. flour thicken the
gravy, first mixing flour with a little
cold water. Add peas.
Place dumplings on top of meat.
Cover kettle very tightly and cook
until dumplings are done.
Time: Cook about 1 hours before
adding dumplings.
Amount: Sufficient -tew to serve 8
people.
Sperry Chicken a la King
1H cups diced cooked chicken
cup mushrooms
cup chopped pimento
' 1 hard cooked egg, chopped
1 cups medium white sauce
Add chicken, mushrooms, pimento
and hard cooked egg to medium
white sauce. Heat and serve on toast.
Western Stew
1 large ohlcken for stewing -3
quarts water (8 cups)
3 slices bacon cut up
I ontm chopped .
3 tsp, salt
1 Mo. 3 can whole tomatoes (3
cups
3 large potatoes sliced
1 cup lima beans (small size)
3 tbsp. butter
1 tsp. sugar
tt tap. pepper dash of red pepper
1 Mo. 2 can whole kernel corn (3
cups)
3 tbsp. Sperry Drifted Snow flour
Cut chicken for stewing, and add
water, bacon, onion and 1 tap. salt,
and allow to stew for 3 hours. Then
remove chicken from bones and cut
In fairly large pieces. Put meat back
In stew and add tomatoes, potatoes,
beans, sugar, remaining salt, pepper
and red pepper. Let boll nr. and
then add the corn. Boiling another
half hour and then add butter and
flour to thicken. T.hls is sufficient
stew to make eight servings.
