A few . fancy fruit dealers, who condition- j ed the fruit, also, offered good j Bosc pears during most of the time j but those constitute only a small j percentage of the retail trade of New Vork City. : These data emphasize in a prac tical way, the results of experimen tal evidence to the effect that Bosc pears . require fairly high ripening lemiioratiires. Practically none of these, operators have storage space, and what little space they do have Is usually subject to out-of-door temperatures and Is un- .uuuu nu- me iui w. i lieu, uh, i tills space Is generally used lor the storage of produce of all kinds ami healing is out of the question. It must be borne in mind, also, that an unusually large number of individuals are engaged In the jobbing and retail fruit trade, and even if space were available, It would he practically Impossible to leach this vast army the method of ripening pears In a proper man ner. - Consumers will Not Take Time (o Ripen Bosc Pea rs. The possi -bllity of educating the consumer to ripen Bosc pears before they are eaten was given attention dur ing these studies, but it soon be came evident -that this procedure was impossible. When the aver age city consumer takes fruit home, he generally expects u use it immediately, and when he buys a pples. gra pes. bana nas, oranges, and other fruits, he usually finds: then ready for eating at th time of purchase. Space is at a prem ium in the average city dwelling. No great supply of food stuffs can he kept on hand. Then, too. condtions in the aver age city home or apartment are not Ideal for the rtpontng of Bosc pears. As a rule, food stuffs are kept in ice boxes or under mechan ical refrigeration, and Bosc pears will nut ripen under these condK lions. Living rooms, as a rule,-are" warm enough for the ripening .of pears, hut the humidity of . such rooms is usually too low for good results. Banana 1litrnhi ltnnns Not Available. The possibility of con ditiuning Bosc pears In the rooms now used for the ripening of ba nanas was given some attention. It was found, however, that these rooms are now being used to full capacity ami that they are gener ally unsuited for pears. In New York City these rooms are located in the produce district, some ins tance away from the piers, and trucking to and from them prior to the auction sale is impossible under the present regulations and, method of handling fruit. Conditioning Rooms Should Be on Main Routes of Travel. It now appears that ripening or condi tioning rooms for Bosc pears In New York City should be located on the main lines of travel, be tween the classification yards nnd the piers. The large cold storage plants .on the Jersey side of the Hudson river seem to be the log ical locations for such rooms. Not only can space and proper ripen ing conditions be provided nt these places, hut it is desirable that re frigeration space be within easy each of the conditioning rooms. Owing to market or other condi tions It may be necessary, at times, to return the fruit to cold storage after it has gone thru the ripening process. This would be practically impossible if the conditioning rooms were located on the piers or at some distance from the cold storage plants. Facilities Necessary for Condi tioning Bosc Pea is. Ripening of Bosc pears In caiiond lots Is not difficult, but certain facilities are necessary to do the work in a satisfactory manner. It Is neces sary to have a room Wherein a fairly high ami constant tempera ture can he maintained. Temper atures varying between 00 and 70 degrees Fahrenheit will usually ripen Bosc pears In a satisfactory manner, but to be able to gauge the ripening so that sales dates can be fixed in advance, it is necessary to have a fnirly constant tempers- DDIKin ! The fruit should be stacked i in a manner that permits free movement of air around the boxes. ; In addition, a fairly high humid ity should be maintained. This can be m eomplished by means of hu midifiers or by sprinkling the.i floors from time to time. A ' f humidity of 7s p.r cent or more will keep the fruit from willing. Prom five to seven days are us ually required to coudtion a car of Rokc pears for market. This factor ..will naturally vary some what with seasons and with the condition of the fruit t tho time ii goes into the warm room. Tiie method of conditioning Bosc pears on track offers .some possi bility. At present, however, this method is t-mtrely in the experi mental stage. Raising of the temper atures in cold storage rooms will ! not accomplish results unless the temperatures are raised above Mij degrees F.
