NORWEGIAN SARDINES
Norwegian sardines are the very smallest of the herring family. The
best grades are very fine and the industry has grown enormously
during the past few decades.
Importations oft his quality pack of.; sardnes are now greatly in ex
cess of those of the French product and the demand is steadily in:
creasing.
AMERICAN SARDINES
The canning of domestic sardines in oil, mustard and otherwise, is an";
important business and large quantities are consumed. '
On the Atlantic coast the small herring is used and on the Pacific
various young fishes, chiefly the "California Sardine" which closely
resembles the Mediterranean sardine jn character and flavor. .
The fact that domestic sardines fail to obtain the higher ' prices ' ail,. -favor
of the imported product is not duo to any uotewwlbyJtliff ferctotie l
in the fish themselves, but to the extraordinary care exercised by the
leading European canneries to achieve the finest possible results."
With similar care, there seems no reason why. the American sardine
should not be rated as highly as any other packing. y,
