Riverside : Economy ' Groceteria THE HOME OF BREAD LIKE MOTHER MADE HOW TO MAKE SAUER KRAUT Remove the outside leaves of cabbage, cut in quarters, and cut fine, cutting hearts with the rest of the cabbage; pack at once into a stone jar as follows: Use one lb. of salt to 40 lbs. of cabbage, sprinkle a little salt at the bottom of jar, then a layer of three or four inches of cabbage and pack down gently with a wooden potato masher. Repeat with salt and cabbage, being sure thatvour proportion of salt is such that it will be dis tribut ed equally, using the amount given above. When packed cover with a plate or wood that will go inside the jar; do not use pine or fir; put a cloth under cover, next to cabbage and a weight on top. Use a granite or flint (do not use a brick or sand stone) ; ferment 10 days, skimming off film that forms daily. When gas bubbles cease to arise when con tainer is tapped the kraut is ready for use. Now wash cloth, cover and weights, puj on new prime, and your kraut will keep. Use this recipe and you will have the best kraut you ever tasted.
