How to Fry flam and What to Fry Most persons frjr ham too long, al though some prefer it served "crisp." Ham should be sliced a little less than a quarter of an inch thick. If it is sliced too thin It will char and fry hard, and it too thick It will not fry evenly all tho way through. Trim off the skin all tho way round very thinly. Then placo tho ham In a cold spider or skillet over an ex tremely slow fire. Allow it to cook very slowly until tho lean part be gins to show signs of turning a deep brown, when the bam should be re moved at once and placed on a warm platter. Immediately upon removing the ham, while the skillet is yet over tho blaze, put in just enough cold water to tako up the fat and juices that have been extracted from the ham in frying. This makes an ex cellent dish gravy. Pour this hot over tho ham. Tho dish is made more attractive by garnishing with parsley. m By using the abovo plan your ham will be moro tender and more de licious than by tho old method ot heating the skillet before the ham Is put In. The best ham is the cheapest In the long run and by far the most de licious. There is less waste and it fries up much better.
