CHOCOLATE DOUGHNUTS
2 tablespoons Am aizo
2A cup sugar
teaspoon salt
teaspoon nutm eg
'/2 teaspoon vanilla extract
2 oz. (2 squares) m elted chocolate
o r 6 tablespoons cocoa
1 cup milk
3 cups flour
3 teaspoons Royal Baking P o w d er
OU pour exactly the right
amount of Amaizo into
the frying pan or the measur
ing spoon—you don’t dig a
chunk from its container, then
wait for it to melt, or mash it
into a measure.
Y
Mix th e A m aizo and sugar together; add
th e salt, nutm eg, vanilla and m elted choco
late (cooled); then add th e milk. Add the
flour and baking p ow der w hich have been
sifted together; roll out on slightly floured
board V4 inch thick. C ut out and fry to a
light brow n in deep A m aizo hot enough
to bro w n a piece of bread in 60 seconds
(375° F .). D rain well and sprinkle w ith
pow dered su g ar ju st before serving.
Amaizo fries quickly, evenly,
beautifully. It does not smoke
at cooking tem perature. It
does not carry the flavor of
one food to another, so it may
be used over and over. It may
even be used for shortening af
ter having been used for frying.
