More to PMH's kitchen than obvious at first glance By Molly Rhea On the front wall o f Pioneer Memorial’s modem kitchen is a dry erase board filled with cryptic notes reminding the dietary staff of some o f the residents' preferences—"Bill’s allergic to strawberries”, “No Pasta o f Any kind to Keithley - Not even in Soup”,“No applesauce (Hates) or eggs for Irene”, “Mane likes wheat bread”, “Do Not send Edna ground meat sandwiches or biscuits/gravy”, “Paul, allergic to grapes/grape juice”. Obviously at least a couple of the residents are diabetic as evidenced by the notations, “Marie needs a snack at 7 p.m. of 1 protein & 1 starch - No Spinach”, “Leora needs 1 protein & Vi starch at 7 p”. Although people are eager to jump on the bandwagon to criticize “hospital food”, few understand the complexities of planning and preparing nutritious, balanced meals three times a day, 365 days a year for more than 20 individuals. Currently Pioneer Memorial Settler’s Home, formerly Pioneer Memorial Nursing Home, is home to 20 residents, ranging in age from 59 to 101. Each of these folks has a diet prescribed by their physician, which may range from “Low Salt - Diabetic”, “Low Potassium”, or “Fluid Restricted”, to regular old “Regular”. A few have food allergies, problems with chewing and/or swallowing, and all have distinctive likes and dislikes. Dietary department head, Sally Maddem, and her crew o f five, including Brian Skaggs, Sandra Goodell, Carol Taylor, Jesse Scott and Lois Connor, work hard to prepare pleasing meals for hospital patients, the residents, as well as selling about 30 meals a day to hospital staff. The kitchen staff also prepares and packages "Hot Meal Express", a noon meal available for home delivery. These dinners are delivered by volunteers four days a week. When patients are critically ill or in the midst of an emergency, the kitchen staff goes out of their way to provide beverages and snacks to their family members, as well as any emergency volunteers. There is more going on in PMH’s kitchen than is obvious at first glance-these people are doing an outstanding job under difficult circumstances.
