Good Food
Good Health
By Karen Cotlms. M S . R D
Although fiber ic found in a wide
variety «>f food«--from bran to

int itule enough «if it in their diets
Health authorities believe that if w r
iih reaved our fiber consumption, we
w«iuld reduce our risk ol several
chronic diseases, including large
bowel cancer
Fiber is the part «if plant cells that
the N>dv does n«*t digest It passes
through the digestive system intact,
moving lood material through the
body smoothly and quickly This
reduces the amount o f time any
hamilul substances in tond are in ihe
system, and thus reduces their poten
Hal for causing health problems
The best sources of dietary fiber
are whole grains, tresh fruits and
vegetables, and legumes (such as
dried beans or peas! Most raw fruits
and vegetables have more fiber than
those which have been peeled or
blended The refined grains used in
the white bread and pasta nuist
Americans cat have been stripped of
fiber and many other nutrients The
same is true o f white rice
