For easy sipping, serve "Boodles Gin 'n Tonic." jBr-r-r...if's cold out, so stay warm, eat hearty Corned beef, cabbage and minted potatoes take a new turn with Leroux Green Peppermint Schnapps. This traditional meal is hearty, easy to prepare. Alongside? A limey "Boodles Gin 'n Tonic." CORNED BEEF, CABBAGE AND MINTED POTATOES 4 pounds uncooked corned beef brisket onion, pierced with 8 whole cloves bay leaf head cabbage, cut into wedges 16-24 small white potatoes, peeled 2 tablespoons butter 14 cup Leroux Green Peppermint Schnapps 2 tablespoons chopped fresh mint, or 2 tablespoons chopped fresh parsley plus teaspoon dried mint 1 Cover corned beef with water in a large kettle and add onion and bay leaf. Simmer, covered, for 216 to 3 hours, until meat is tender. About 15 minutes before cooking time is up, skim fat from cooking liquid and remove onion and bay leaf. Add cabbage and cook until tender. In a separate pan, cook potatoes in boiling, salted water until tender. Drain and toss with butter, Leroux Green Peppermint Schnapps and herbs. Makes 8 servings. BOODLES GIN'N TONIC l'i ounces Boodles Gin Tonic Water Pour Boodles Gin over ice cubes in tall glass.
