Bids from DeVac and Cha year feet fruits and vegetables at their peak of freshness. Sort them for size and ripeness so they'll cook more evenly. And wash them thoroughly under running water or through several changes of water. Canning jars have to be perfect, washed in hot soapy water, and rinsed well. The same is true for the jar lids. You can pack fruits and vegetables into containers either raw or at or near boiling temperature. Most raw fruits and vegetables shrink during processing so should be pack ed tightly. Some exceptions are corn, lima beans, and peas they expand. Hot foods should be packed fairly loose ly. Use enough syrup, or juive to fill around and cover the solid food. Otherwise, food at the top tends to darken. With only a few exceptions, some space should be left between the packed food and the closure. V REALTY CO.
