Here, the ring artistry is achieved by using unflavored gelatine to mold two kinds of chicken salad. One ring combines diced cooked chicken with pineapple and celery in a consomme base. The second one has chicken, greon pepper and celery in a creamy base. The chicken and other in gredients are fully savored because unflavored gelatine offers no competing taste. Chicken and Tlnenpple Ring 2 envelopes unflavored y4 cup lemon juice gelatine 1 can (14 ounces) crushed 1 2'A cups cold chicken pineapple stock, divided 3 cups diced cooked chicken J4 teaspoon salt P diced celery Sprinkle gelatine on 1 cup of the cold chicken stock in sauee- an to soften. I'laco over low heat; stir constantly until gelatine i dissolved. Remove from heat; stir in remaining l'2 cups stock, salt, lemon juice and pineapple. Chill until the consistency of un beaten egg white. Stir in chicken and celery. Turn into a 5-cup ring mold; chill until firm. Unmold; fill center with salad greens .Yield: 12 servings. Chicken and VrgetaLIe Ring 2 envelopes unflavorod V2 cups mayonnaise or salad dressing 3 cups diced cooked chicken Vj cup diced green pepper l cup diced celery relatinn IVa cups cold chicken stock teaspoon salt 2 tablespoons lemon juice ' Rpnnkle gelatine on 1 cup of the chicken stock in saucepan to soften. I lace over low heat; stir until gelatine is dissolved. Re move from heat; add remaining cup chicken stock, salt and lemon juice. Cool; gradually stir into mayonnaise. Stir in chicken, green pepper and celery. Turn into a 5-cup ring mold; chill until firm. Unmold, fill center with salad greens. Yield: 12 sorvings. Julie Rietmann, daughter of Mr and Mrs David Rietmann, Is attending summer school at Ore gon State College for 8 weeks. Mrs Rietmann and Wayne took her to Corvallls. Mr and Mrs Dick Ekstrom and Vickie spent last week with rel atives here. He Is now attending summer school at E O C E. Mrs Omar Rietmann gave a report on the Rebekah Assembly at Roseburg at the Rebekah lodge meeting Thursday even ing of last week and showed films taken at the Assembly and the I O O F Home In Portland. Mrs David Rietmann served re freshments after the meeting. Mr and Mrs Bill Rietmann spent last week In Portland where they attended the Cen tennial Exposition. Mr and Mrs Robert Rietmann left Tuesday to attend It. Mrs Esper Hansen of Portland Is visiting her mother, Mrs Olive Engleman and other relatives. Mr and Mrs Milton Morgan re turned home last week from Port land where they attended the Ice Follies and the Centennial activities. Add flour and mix until crumbs are formed Then mix thoroughly with hands until soft dough is formed. Press evenly into bottom of 9x9x2-inch pan, with about la inch extending up the sides. Prick bottom with fork. Bake in moderate oven (350" F.) 15 minutes, or until crust begins to brown. Remove from oven. Spread pineapple evenly over crust. Add cup sugar to well beaten egg; beat until blended. Fold in 1 tablespoon melted butter and the coconut. Spread mixture evenly over the pineapple. Re turn to oven and bake 20 minutes longer. Cool. Cut in l'j-inch squares. Makes 3 dozen squares. 4-H members from here who are attending 4-H summer school in Corvallls this week are Ken neth Smouse Jr, Kenneth Nelson Marilvn Morgan. Mrs Howard Crowell and son, Gene, are in Portland where Gene went for medical treat ment. Mr and Mrs Berl Akers and family and Mr and Mrs Wallace Matthews and daughters were weekend visitors in Portland. Several from here attended the Swanson-Ingram wedding In Pendleton Saturday morning, June 20. Mr and Mrs Garland Swanson assisted by Mrs Harvey Ring en tertained 41 relatives at a dinner at their home Saturday evening who attended the wedding. Out of town guests were Mrs Agatha Delalney of Dawson Creek, B C, her daughter and family, Mr and Mrs Howard McKellar of Dawson Creek, B C; Mrs Alex Salstrom and her daughter, Mrs Jim Rob ertson and daughter, Dottle Ann Robertson; Mrs Catherine Brown and granddaughter, Linda Hln kle; Miss Lena Miller, Mr and Mrs Joseph Miller and family and Mr and Mrs Mike Miller and family, all of Salem and Phillip Miller of Los Angeles. Mrs Margaret Ingram, mother of Mrs Dennis Swanson, and her daughter, Marilyn Ingram came to lone after the wedding and attended the dinner and also remained overnight here.
