Mexican Pepper

packaged pre-cooked rice
teaspoon salt
lVa cups boiling water
6 green peppers
9 totilosnnnns butter
3 eggs, slightly beaten
Vs cups drained canned whole
kernel corn
1 cup grated Cheddar cheese
1 tablespoon grated onion
1 teaspoons salt
Dash of pepper
3 tomatoes, sliced
Melted butter
Add rice and V teaspoon salt to boiling water in saucepan. Mix
just to moisten all rice. Cover and remove from heat. Let stand
13 minutes. . , . , ,,
Cut peppers in half lengthwise and remove seeds. Cook the pep
pers in boiling salted water 5 minutes, or until tender. Dram. Place
peppers, cut side up, in baking dish. Sprinkle lightly with salt.
Combine the rice, butter, eggs, corn, cheese, onion, VA teaspoons
salt, and the pepper. Mix well. Fill pepper halves with rice mixture
and top each with a slice of tomato and brush with melted butter.
Bake in moderate oven (350F.) 35 minutes, or until filling is firm.
Makes 5 servings.
