Unflavored gelatine, a little sugar and instant coffee make the clear jelly for the top layer. Whipped cream is added to the basic recipe for the bottom layer. Each taste is like sipping coffee through whipped cream. Two-Tone Coffee Mold Coffee Jelly: 1 envelope unflavored gelatine lhi cups hot water Vi cup cold water cup sugar . 1 tablespoon instant coffee Sprinkle gelatine on cold water to soften. Add hot water; stir until gelatine is dissolved. Add sugar and coffee; stir until sugar is dissolved. Turn into a 5-cup mold; chill until almost firm. Coffee Bavarian: 1 envelope unflavored gelatine cup sugar cup cold water 4 teaspoons instant coffee - cup hot water 1 cup heavy cream, whipped Sprinkle gelatine on cold water to soften. Add hot water; stir until gelatine is dissolved. Add sugar and coffee; stir until sugar is dissolved. Chill until mixture is the consistency of unbeaten egg white. Fold in whipped cream. Turn on top of almost firm first layer. Chill until firm. Unnv!d; garnish with additional whipped cream. YIELD: 8-10 servings. NOTE: If desired, recipes may be used separately. Increase sugar in clear coffee jelly to H cup and turn into a 2-cup mold or 4 in dividual molds. Turn coffee "Bavarian" into a 3-cup mold or spoon into dessert dishes. New White Winter Wheat Named Burt ine racmc inonnwesrs new bread-type, smut-resistant hard white winter wheat has been named Burt, according to F. E. Price, director of the Oregon State college agricultural experiment station. The new wheat was released August 24 by OSC and Washing ton State college experiment sta tions. Title clearance of the name, Burt, has just been received from the.U. S. department of agricul ture. The name was selected by Pacific Northwest wheat breeders in honor of the late Dr. Burton B. Bayles, wheat breeder and USDA wheat project administra tor. Dr. Bayles worked hard for de velopment of a hard white bread type wheat and for establishment of the Western Wheat Quality laboratory, now located at Pull man. He died April 2V 1954, at Beirut, Lebanon, enroute to Da mascus, Syria, to attend a food and agriculture organization con ference on grain improvement in the Near East. The Burt variety is recommend ed for production in the drier rainfall areas 14 inches and under of Oregon and Washing ton. It is not recommended, how ever, to replace the new hard red winter variety, Columbia, in 10 to 14-inch rainfall areas where the hard red variety Is adapted. Columbia is being recommend ed principally in western Uma tilla, northern parts of Morrow, Gilliam, and Sherman counties, and southern Wasco county. Both Burt and Columbia, which was released last year, are high ly smut-resistant and have stiff, lodge-resistant straw. Hard, red wheats have a background of high performance for bread flour which may give Columbia a slight edge with millers, reports D. D. Hill, OSC farm crops de partment head. Columbia and Burt are both higher yielders than Rio, the es tablished hard, red winter wheat variety which lodges badly. Burt has a bearded, common-type (long) head, and white chaff.. In winter hardiness trials, Burt ranks with Elmar and Brevor, but notably below Rio. Milling and baking trials by the Wheat Quality laboratory show that Burt mill3 better than Rio and compares quite favorably in baking quality to the hard, red winter wheat varieties of the two states. Burt has the yield and quality to replace club wheats in the drier areas of Oregon and Wash ington, Price stated. There Is danger of club wheats in these areas having a protein content too high for pastry flours, and club wheats lack proper charac teristics for top quality bread flour. As a result, the market outlook for clubs in these areas is highly uncertain. In the drier areas, Burt yields as well or better than Elmar or Brevor. It can be used domestic ally for bread flours and has a Gel-Dessert " '" , -nil potential export market. Japan ese officials touring the Pacific Northwest in the past few weeks have expressed an interest in the new wheat. Japan is the major outlet for the region's wheat ex ports. Plans are now complete for the distribution of some 8000 bushels of certified Burt seed this fall to Oregon certified seed growers, according to Hill, who is chair man of the Oregon Seed Alloca tion committee. By the fall of 1957, enough seed should be available to plant most of the commercial acreage in the adapted areas of Oregon, Hill said. Seed will be distributed through special county commit tees appointed by OSC extension service and the Oregon Wheat Growers League. o More State Fair Winners Named Several additional local en tries received first place awards at the state fair, reports received since last week indicate. Janice Martin of Heppner re ceived a red ribbon for her 4-H "do -it-yourself" homemaking entry. Janet Wright, Heppner also received a blue ribbon for her dress entered in the 4-H winter clothing division. Judy Howton, lone, won reserve champion in the best dress division. Mardine Baker of lone received a red rib bon in the same division. Sharon Lindsay, Heppner won a red ribbon for her exhibit in the 4-H "Charmingly Yours" clothing division. Linda Heimbig ner, lone, received a red ribbon for her cotton outfit for play. Judy Schmidt, Heppnerwon a blue ribbon on her clothing de monstration and Mardine Baker, lone, a blue ribbon for her dollar dinner. Winners of blue ribbons in the cooking division were Sandra Eubanks, lone, muffins; Mardine Baker and Judy Howton, cooking IV scrapbooks. Carole Anne and Connie Anderson received white ribbons for their bread. Marjorie Peck and Joann Bros nan, both Heppner, . and Linda Heimbigner, lone won white rib bons for "fun and Sun" clothing entries. Mr. and Mrs. Carl McDaniel and Georgena and Mrs. Owen Leathers attended a birthday party in honor of Mr, McDaniel's sister, Mrs. Larry Cook, at Camp five last Monday.
