Call it tradition, or what you will this is the time of year we expect
to enjoy the delights of cakes fragrant with spices. High on the list of
desserts to make now is feather-light, regal-looking Frost Spice Cake
that generously yields 1(J to 20 servings. Make it with a vacuum-packed
oil that blends quickly with other ingredients because it is superflned.
Frost Spice Cake, with its easy-to-make cream cheese frosting, stays
lusciously moist. This icing has a burnt-sugar flavor, though cither
orange or lemon are approved with spice cake. The cake keeps beauti
fully, and even with the cream cheese frosting does not need to be
refrigerated.
Frost Spice Cake
6 eggs, separated
2 tablespoons molasses
cup cold water
1 teaspoon grated orange
rind
2 teaspoons orange juice
Vi teaspoon cream of
tartar
214 cups sifted cake flour
1 J2 cups sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
Vi teaspoon cloves
Mi teaspoon nutmeg
Mi cup salad oil
Sift the flour, sugar, baking powder, salt, cinnamon, cloves, and nut
meg together into a bowl. Make a well and add in order, the oil, egg
yolks, molasses, water, orange rind and juice. Beat with a spoon until
smooth. Add the cream of tartar to the egg whites and beat until very,
very stiff. Pour the egg yolk mixture gradually over the whipped egg
whites, carefully folding with a rubber scraper just until blended. Do
not stir. Pour immediately into an ungreased 10 x 4 inch tube pan. Bake
in a moderate oven, 325, for 70 minutes or until the top springs back
when lightly touched.
After removing the cake from the oven, turn the pan upside down,
placing the tube part over the neck of a small funnel. When cold, loosen
the sides with a spatula, remove the cake from the pan.

When you were a young
ster you probably liked .to
play "guessing" games. It
was fun and there were no
dire consequences if you
guessed wrong.
Not so with insurance. For
example, consider the insur
ance on your personal pro
perty and household goods.
We can and do write in
surance against any speci
fic hazard that you care to
name, such as fire, vandal
ism, robbery, and so on. Peo
ple guess at what might
cause a loss and then insure
against it.
The important thing to re-,
member, though, is not that
a fire, or a burglar might
cause a loss, but that your
property may be lost or de
stroyed by any number of
things. This suggests a
broad form of protection.
We suggest that you for
get about trying to guess in
advance just what peril
may cause a loss, and in
sure against nearly all loss.
The Personal Property
Floater covers practically all
vour personal property
against practically all risks,
anywhere in the world. In
cluded are all common per

Simplification of
Tax Law Favored
OREGON STATE COLLEQE
The major needs in the simplifi
cation and improvement of Ore
gon's tax structure are for emer
gency tax measure provisions and
a change in the personal tax law
to make funds available as gene
ral revenue, tax experts attending
the recent State Tax conference at
Oregon State College report.
Th tax experts members of
the legislative interim tax andj
that Oregon's tax system is super
ior to that of neighboring states
but does need some remodeling.
They are not advocating a state
sales tax at this time.
A bill calling for a change in
the personal income tax law to
make funds available for general
sources will be presented to the
1953 legislature they said.
Cronemiller outlined the proce
dure to keep the Christmas tree
in first class shape until ready
for use:
(1) Saw a slanting fresh cut
immediately above the original
cut. This will permit tree to ab
sorb water.
(2) Place the tree base in
fresh water. A bucket or deep
pan will do.
(3) Keep tree outside in a cool
place until ready to bring into the
house.
After bringing the tree In the
house, again place the trunk In a
bucket or pan of water. This
moisture will continue to keep
the 'tree fresh and green and will
also render it less susceptible to
fire. Cronemiller said that forest
ry officials-had made many tests
with chemicals but none were as
satisfactory as plain water as a
preservative. As long as the tree
trunk is kept in water, the needles
will remain firm and green for a
considerable period.
Cronemiller stated that weights
could be placed in the bucket to
keep the tree erect. Also, stands,
with water devices . for holding
trees, may be purchased at local
stores and Christmas tree lots.
Duvalls Honored
With Dinner Party
Mr. and Mrs. Vivian White en
tertained recently with a dinner
honoring Mr. and Mrs. Harry Du
vall. The occasion marked the
anniversary of the couple as well
as Mr. Duvall's birthday.
Other guests attending were
Mr. and Mrs. Niel White of Pilot
Rock.
Tips Given on Keeping
Christmas Trees Fresh
Christmas tree hints on how
to keep your tree fresh and beau
tiful were given out by Lynn
F. Conemiller, assistant state
forester.
"If you live in the city", the
forester said, "chances are that
your Christmas tree nas oeen cut
a week or two earlier and should
receive care immediately to pre
vent dis-coloration and falling of
the needles. Christmas trees are
like any other plants and respond
when the base is placed in water
and kept in a cool place."
