Heppner Gazette Times, June 17, 1943 -3 18,000,000 Victory Gardens Will Call For Unparalleled Canning Program With 18,000,000 or more Victory gardens growing, many a homema ker will have home grown tomatoes berries and other garden food for summer meals, and now and again some left over for canning. In local markets, also there may be at timas some fruit or vegetable sufficiently abundant, fresh, and reasonable to attract homemakers on the lookout for food to put up. For home canners, it is useful to learn to judge how far a garden surplus or food in market "will go in filling jars- Home economists of the U. S. department of agriculture say: Learn to know what can be done with small quantities, as well as large. This year especially it is well worthwhile to put up even three or four jars at a time, always provided you have the right equipment for canning. On the basis of blue ration stamps needed for commercially canned foods, every jar of home canned food represents a saving in ration points, besides all the other advantages of storing up summer time food for winter. To help thrifty homemakers fig ure how many jars of canned food to expect from fruits or vegetables as bought or picked, the home econ omists offer the following table with the reminder that such figures can be only approximate: HOME CANNING ARITHMETIC Apples 1 bu. (50 lbs.) cans 20 qt; 2 lb. (7 to 8 apples) can 1 qt. Beans, lima 1 bu. (28 lbs.) cans 6 to 8 qt.; 4 to 5 lb. can 1 qt. Beans, snap 1 bu. (24 lb.) cans 16 qt; IV2 lb. can 1 qt Beets 1 bu. Picking Up Fawns Not Authorized By Law The Oregon State Game commis sion again issues a warning to in dividuals to refrain from picking up fawns and taking them home for pets. It is against the law to do so unless it can be proved absolutely that the fawn is helpless and the'n a permit from the game commission is lequired. In most instances, how ever, the fawn has not been desert ed but has only been left temporar ily while the doe is seeking food. When there is any doubt, the fawn should be left alone. Persons who think they are help ing to conserve wildlife by taking fawns home and feeding them are not doing so. Deer kept in cap tivity ordinarily cannot be turned loose again as they are not accus tomed to care for themselves. Also, their usefulness as pets is soon over for as the deer grow older, many become mean and dangerous and in the end have to be killed by the game department to protect hu man life and property.
