So often when serving cocoa as a
drink there will be cupful or more
left over. Bet It

and set awny to cool. Serve wltn

Cocoa Angel Food. Heat the whiles
of five eggs until stiff, add one-fourth
trnnpoonful of cream ot tnrtur and
fold lu lightly one cupful ot sugar.
Sift together one tcaapootiful of corn
starch, one-half cupful of flour and
one-fourth cupful of cocoa. Add one
teaFpoonful of vanilla. Mix all to
gether and bake In tube pan In a
slow oven.
Cocoa Sauce. Take five and one-
half talilvxiHMitifula ot cocoa, one cup
ful of sugar, one and throe-fourths la-
blciipootifuls of cornstarch, oue-half
cupful of cold water and a pinch
of suit. Cook In a double boiler, edit
ing one and one-half cupfuta of bolt
ing water; stir coiiHtnully until the
mixture thlckt-na. Then cook over
the hot water for half an hour. Add

Marehmallow Frappe With Cocoas-
Scald three cupfuls of milk and stir
Into It one-elgtitb teaspoolirul ot salt,
two and one-bait tablespoonfuls of
cocoa, one-balf cupful of augar; let
the mixture boll up, then add one-balf
cupful of marehmallow cream or It
equivalent ot diced marshmallowa.
Chill, add one-bait teaspoonful of va
nilla and fret-te, packed In Ire and
salt Tills amount will serve all per
eon.
Maple Parfalt rk-nt four eggs
slightly and pour alowly on them oue
cupful of hot maple sirup. Cook care
fully until the egga are cooked and
the mixture thickened. Cool and add
a pint of thick cream whipped. Pour
Into the mold. Pack In Ice and aalt,
four parts of Ice to one of salt, and
let stand three to four hours.

lemon Juice. Mix with the prunes
and nuta and aerve on a curled let

for a garnish.
