HERE ARE SOME SOUPS CUT up six white onions and fry In a tablespoonful of butter until light brown. Add a quart ot water and a pint ot milk, season with one teaspoonful of suit and a dash ot pepper, a teaspoonful of sugar and a pinch of mace. Cook slowly for an hour and strain; beat four eggs until light, add a cupful of cream and a tablespoonful of cornstarch mixed with a little cold water ; cook until the starch Is well done before adding the eggs snd cream. Just heat but do not boll or the eggs will be curdled. Quick Soup. 1 Take can ot pea sdup and a can of condensed milk that which Is less sweet is mors desirable. Mix well, heat hot snd serve with crackers. Curried Chicken. Take two cupfuls ot cold cooked chicken cut Into small pieces, one cupful ot chicken gravy, one cupful of milk or cream, one-half ot amall onion minced fine, on tea spoonful of curry powder, one table spoonful of butter and aalt to taste. Cook the onion In the butter, stir In the grsvy and curry powder, then add the chicken and simmer ten minutes. Ice cold bananas wltb rice niakf a nice accompaniment to curry of any kind. Cream of Barley Soup. Melt two tablespmnifula of butter In saucepan, add tw o tablespoonfuls of dour, and rook three minutes, stirring steadily. Then add one cupful of pearl barley and cook two minutes. Add slowly one pint of boiling wster and one of milk, stirring until well-blended and simmer gently for one hour. Rub through a sieve, return to the heat and add thres pinta of chicken stock, one tablespoonful of cornstarch mixed with a little cold water. Boll until the stsrch Is well cooked and serve hot Condensed milk added to a canned pea soup, heated hot and served with fingers of tosst makes fins' cup of soup for a chilly night.
