This is the declaration of Acting Food Administrator W. K. Newell, who intends to see that the light of publicity is turned upon all eating places which do not observe the Hoover rules on meatless Tuesdays and wheatless Wednesdays. "There is no longer any excuse for not observing the simple requirement of the United States Food Adminis tration," said Mr. Newell. "The public is now familiar with the Hoov er rules and its purpose, and is giv ing its hearty support to the eating places observing the wheatless and meatless days. It is even becoming critical and resentful of places which do not do so. We have received a number of complaints from different parts of the State in regard to res taurants and hotels not making any attempt to observe the wheatless and meatless days. We are now making a list of these unpatriotic places with a view to publishing their names in their own communities. The patriot ic spirit of the public can be depend ed upon to do the rest." Mr. Newell suggests that in those localities which are distant from the fish market, poultry and cheese dish. ps be used as a substitute for meat on meatless days. Vegetable luncheons, for which several kinds of vegetables attractively arranged, are served on one plate, and which are now becom ing so popular in the first-class ho tels and clubs of Portland, are also satisfactory meat substitutes.
