Omaha World. AGRICULTURAL. Devoted to the Interests of Farmeri and Stockmen. Homc-Made Cheese. This is the time of the year, or soon will be, when butter-making becomes tiresome and cheese-making comes for a change or variety. Cheese is a common article of diet and very wholesome and nutritious. Every farmers wife should know how to make good cheese, and it is said to be as easy to make cheese us to make butter. What is needed is a boiler for heating the milk, and a tub for setting the curd; a press can be easily made that will answer the purpose, and a thermometer. Five quarts of milk will usually make a pound of cheese, Milk just from the cow has the right temperature. If it don t work than heat it to 90 degrees. Rennet, in li quid form, cau be procured with full directions for itaiwe. Mix thoroughly as directed. Ihe curd should form in half an hour. When hard enough, cut with a knife into inch-square nii'pflu tn lot thn uIiav 8f rin ra.t.A t hen draw it Let the curd Btand on one side for an hour to drain. It will then be slightly acid ; break up with the hands, adding an ounce of 8 .It to three pounds of curd. A hoop made of wood or sheet-iron, just the size for the cheese say eight inches in diame ter and ten inches deep can be used and will make ten pounds of cheese, Flace a cloth bandage in the hoop and press the curd in with the hands Press the curd family, then keep it in the press twenty-four hours; after this place it in the curing room, aad turn it every day from two to four weeks. In two months it will be ready for the table. Factory made cheese is apt to be hurried iu making, and is not as good as a really grod home-made ar ticle. Really, it is easier to make cheese than butUr; it is as readily sold, and brings more money, or fully as much. So there is no reason why farmers' wives should not make cheet-e to sell and to eat at home, and of the best. Curing Balky Horse. Many ways are recommended to cure a horse from balking but a very sensible plan is given by a correspond ent of the Country Gentleman. H idea is to make the horse forget tba' he tried to balk. For this purpose be tried him at the harrow if he balked in the wagon. If there was some par ticular place where he usually balked, the owner would stop him there, get out and give him something to eat and he would forget that he wanted to balk and go on all right. A horse is susceptible to kindness, and cruel nsage only liardens his nature and makes him obdurate. Iet him get the idea that you intend to be cruel to him and he will be ugly to you. Treat him with kindness when you get him and he will forget unkind treatment received previously, and become gentle and trr.ctable. The famous borse- breakets always conquer by kindness. If a horse refuses to start, give him a bite to eat and then after a moment, lead him away a rod" or so, and the chances are that he will go along and forget about the balking. II you ' use a horse in this way a few times, un lei's he is incorrigible and extremely ugly by nature, the chancea are that he will learn to respect you and' for get to balk. There are few horses that are really ugly, but some animals are of a hateful turn and are much harder to work than others. White clover is the best pastur grass that can be grown for theep. As white clover is a short gras it is more desirable than red clover for ruling, as sheep detest long grass. preferring to crop close to the ground. On a mixture of gnu-sea in a pasture cattle and sheep may be grazed to- eethr, as the gr.isses that may be ob jectionable to the cattle will be ap propriated by the sheep. The farmers of the United States planted last year 78,000,000 actvs of corn, or an area as large as Maine, New Hampshire, Vermont, Massachu setts, Rhule Island, Connecticut, the whole of New York and New Jersey Ihe number or bushtls of corn raised was 1,456,161,000 and the total value of the product was $646,106,770 Iowa raised 183,000,000 busi.els; Illi nois and Missouri each about 140 000,- 000 bushels; Nebraska 93,000000 Kansas and Texas each 76,000 100. No grafting can be successfully and certainly dune unless the wood fo scions has been cut before the bud have swelled and kept cool and moist through the winter. To do this cut the wnod in late fall and keep the hcions all winter in moist but not wet sand or soil. It is even advisable to let them lose a little of their original sap or moisture. An Oregon nuiery man once threw away a lot of scions as they were considerably shrunk. He was surprised to find that the portion he used took and grew better than any of the rest. This was because there was vitality left in the wood, and be ing a little dry the sap from the juicy stock quickly filled it. and set it to growing thriftily. - Ihe .Feerlees is no doubt a good po tato, but it is not so good as the Bur- bank. Set the two before a good ap petite and the liurbank, that is so clear, rcealy and white, with euch a relish, too, is far ahead of the other, It does not seem possible for any po tato to eat better than the liurbank does in April, and the natural advice to give would be to plant the Burbank unless something fully as good or bet ter is to be bad. Something is due to the sou on which the potato is grown Whether the Burbank ia as good grown in ordinary soil as on river bottom and sandy loam is a question. This spring the Burbank has sold higher than most other kiuds. SCHOOL AND CHURCH. During the last j-ear nineteen new missionaries were accepted for service by the English Baptist Missionary So ciety: eight for China, six for the Con go, three for India and two for Ceylon. A well-knwn professor gave notice that he could not meet his "classes." A wag deleted the "c" and made it "lasses." The professor again deleted the "1," and finished by having the best of it. Five young women of the junior class of Colby University carried off the class honors. The boys are trying to excuse themselves on the ground that 1 they devoted a good part of the time to athletics. Several varieties of crapes are used in tnakinjr raisins, but the different names of the varieties, of dried fruit are usually given from the locality whence they are imported. The com mon mode of drying is to Bpread the bunches on platforms or suspend them on lines in heated rooms, where they are allowoei to shrivel slightly. They arc then dipped in a lye of wood ashes and barilla, to each four gallons of which pint of nil and a handful of salt Is added. This causes the sugar to ex- udff through the skin, and makes a slight varnish on the ouUide of the fruit. In this way the Valencia raisin, the favorite cooking raisin. Is pre pared. It is shipped principally from Valencia, Spain. Malagas also take their name from the Spanish port. whence they are most lanrcly sent. ineFe are made Iroui a richer grape than the Valencia, and are dried on the vino in the sun. The grapes do not fall off when ripo. so the stem is twisted and the grapes shrivel by the evaporation of their own water. In this way the fruit keeps more freshness and bloom than in any other. - and there . ia very lilt'e exudation of sugar. These rai-ins arc also called Muscatellcs, and are the favorite table raisins. Spain is still the greatest producer of raisins. though large quantities are also raised in j urkey, and California is becoming afi important locality for the produc tion of this favorite fruit. The Sul tana or seedless raisins are produced in Turkey. These are cured in the sun, a light sprinkling of oil beiug em ployed to prevent the too great evap oration of the moisture, and also to as sist ia the preservation of the fruit when packed and shipped. TheEleme raisins arc also produced in Turkey, and are used chiefly for export to dis tant colonies and for ships' stores. As their name implies, they are picked ra:s:ns, and are packed specially for ship use from the vines of tbe Car- bourna and Vouria districts in Asia Minor. The gTvat proportion of the raisins irom amvrna are known as Chemse," the name of an Island near the mainland. These are the Turkey grapes, rure and simple, without a- lection, pii-K.ing of staiks, or any manipulation whatever. They find ready market in Eastern countries. but ars the special feature of fruit trading between Turkey and Ger man porta. Taere are vast districts n Persia where raisins are cultivated. but the d.Uiculty of getting them to market is so great that it does not pay to export, consequently they are used or distilling and local purposes. At the Cape of Good Hope raisins are produced which find a market chiefly n Australia. Distillation of raisins nto wine is becoming quite an im portant business, the flavor of the dry fruit giving a very pleasant taste to the beverage. The raisins nsed for this are the small black Smyrna raisins. The dried fruit known to commerce as the Zante currant is a variety of raisin. It is not made from a currant, but from a very small grape dried in the sun. These small raisins were at first called Corinths, because they were im ported from the port of Corinth. Their similarity to currants caused the name to be corrupted later, as many sup posed them to be a kind of dried cur- rent. Toledo Blade. CREDIT EVERYWHERE. Bow to Keep Fowls In s Healthy and Thriving- Condition. The getting of plenty of eggs in win ter by the intelligent poultry-keepef stimulates the less thoughtful to the good resolve of having a poultry house. In choosing the site, select, if possible. i sidehill that slopes gently to the south. This secures natural drainage. provided you throw up the earth against the north wall to form a sur face drain. Solar influence will be of great advantage iu this location, in melting away the snow several weeks in tvdvauce of adjacent fields and ex posing a previously sown forage crop for the early use of the fowls. As soon as a fowl can secure a part of her own living the profit will increase ia the same ratio. If a sidehill is not avail able, select, as next best, a ridge run ning east and west, and build on the southern si one. On end of thn nnnltt-v ! house should come to the lane that is traversed in going from house to barn; this will save labor. In a level coun try do not commit the common error by building first and grading after ward, bnt grade first Plow a back furrow good and deep, going east and west, at least three times as wide as the width of your building; now use the 6craper, and raise the ground at least a foot high, but be careful to open up a surface drain that no water will stand or settlu about the building. It is lmpoible to keep fowls in a healthy thriving condition ia wet oi damp quarters. For the foundation dig a trench below the action of frost, and fill it with small stones; size ut the wall to face on the inside of thi sill; allow the wall to project on tin outside of sill to make a good strong wall as far as the surface of the ground. Then make a set-off to the size of yoni building outside, for the double pur pose of preventing rats digging down side of the wall and gaining an en trance, and for the room gained on the inside; "ground-room is what tells in the poultry business." If a side-hill can be found for a site, it has one im portant advantage over all others; by excavating to a depth of two feet, and throwing the earth out on the north aide, an embankment can be had at a mall expense, thus subterranean heat is provided for, which aids greatly ii keeping up a uniform temperature and obviates the expensive use of arti ficial heat. The foundation wall on the north side. In this case, should be. when completed, three feet higher thai the south walk The wall all round should be tea or twelve inches above the grade, to preserve the frame work, and for tho purpose ef banking up with coarse gravcL for the use of the fowls at all times in the year.
