Cherry Jelly ami Jam

sufficiency of sugar . . and the right
recipe. Put them all together and
they spell jelly—or jam. if you pre­
fer—of a gorgeous color and uni­
versally liked sweet-tart taste.
Cherry spreads are nice to have
the year round. The jam is particu­
larly delicious with fowl. And when
you make a pie of that leftover
chicken, by all means serve the
cherry jam with it too. Or use it with
roasts of all kinds. The jelly is es­
pecially good in salads and desserts,
and with cottage cheese.
Start now building up the section
of your jam cupboard to be devoted to
cherry spreads. Here are the recipes
you will need:
Sweet Cherry Jam
3 »4 cups (1A* lbs i prepared fruit
4 cups 11% lbs. I sugar
1 box powdered fruit pectin
To prepare fruit, pit about 2t>
pounds fully ripe cl.erries; crush
thoroughly or grind. i If a stronger
cherry flavor is desired, add a few
crushed cherry-pit meats to fruit dur­
ing cooking.)

Measure sugar into dry dish and
set aside until needed. Measure pre­
pared fruit into a 5- to 6-quart Kettle,
filling up last cup or fraction of , up

Ceccato were in Yreka Saturday.
— Miss May Roberts was in Med­
ford Wednesday evening.
— Mr. and Mrs. Joe Francis Jr.,
and Mr. Alfred Francis, spent the
week-end in Hilt
— Mrs. Bradfield and daughter

Sour Cherry Jelly
3 cups (1*4 lbs > juice
4 cups (1% lbs.i sugar
? box powdered fruit pectin
To prepare juice, stern 1 do in t pit 1
and crush about 2A4 pfuinda fully
ripe cherries. Add H cup water,
bring to a boil, and simmer, covered.
10 minutes. If a stronger v berry
flavor is desired, add a few cr tubed
cherry pits during simmering. Pla<*"

On FHA Loans
Loans issued by Oregon lending
institutions since April I, under
the Modernization Credit Plan of
the . voertil Housing Administra­
tion are considerably larger in a-
niount than the average prior to
the revision of the National Hous­
ing .»ct, according to Jamieson
Parker. State Director.
The present average amount of
loans unuer $2.000. the director ex­
plained, is almost $500. while the
earlier average was approximately
$285. The national average be­
fore April 1. was $334.
The increase was attributed by
Parker to discontinuance of ins­
urance of loans for the purchase
of movable household eqquipinent,
and to the requirement that bor­
rowers must lie the owners or •-«
sees of the properties to be un­
proved.
"More than 17,000 credit trans­
actions had been reported by Or­
egon lending agencies up to the
end of .»ay and the total amount
released in the form of insured
loans, under the Modernization
Credit . .an, was in excess of
$5.400.000' . Parker stated

General Conrad
Visits Medford
The district was honored June
15 when Brigadier General C. H
Conrad, Jr., commanding genera! i
of the ninth corps area, inspected
here.
General Conrad, who assumed 1
command upon the retirement of
Major General Paul B. Malone. '
spent a full day here, inspected the
downtown headquarters as well as
headquarters detachment and the
various departments at the fair­
grounds, and then visited Camp
Prescott.
He was accompanied by 1st
Lieut. J. G. Van Houten, Inf., who
is regularly on duty with the Gen­
eral at Fort Lewis.
General Conrad will be succeed­
ed by Major General George S. Si­
monds, who will arrive soon from
the east.
General Conrad is intensely in­
terested in the CCC activities and
has made many innovations in his
Fort Lewis district which
thought might be oí value here.
