The publlo only knows two Rpi"ral classes, viz., tho ere en and the biack teas. Greeu Teas. Few people know that the bright bluish green color of tho ordinary teas exposed In tho windows Is not the natural color. Un pleasant as the fact may be, It is nevertheless artificial; .Prussian bine, silica, gypsum, plumbago, and other uuhealthful mineral colors beiug used for this purpose. The effect Is twofold. It not only cakes the tea a bright, shiny, attractive green, but alio permits the use of "off-color" and worthless teas, which, once under tho green cloak, are readily worked off as a good quality of tea. Theabonv 1 nu 1)1 e coloring vract.ee even admits of the use of foreign substances, and the English government, which looks closer Into the gen uineness of Its i'upU's than ou:s, has In some of the alleged " fluobt " of teas found redried leaves, straw, fragments of matting, rice husks, and willow leaves. I:i fact, It is openly stated by an English authority that hundreds of thousands of pounds of sloe, ash, ar:d wil low leavci ai annually imported as tea, which without the eoloriiis proeets wou!J be impossible. They report tea as one of tho most notoriously adulterated articles of commerce. The temptation to make sweepings and bad tea into a merchantable product with n few cents' worth of green coloring matter Is too strong to withstand, and the worthlessness of the trash that often finds Its way to this mar ket labeled J'Xew Crop," "Best Quality," " Green Tea," etc., would simply astound tho publlo If revealed, to say nothing of the un healthfuluess ot tho Trusslan blue, plum bago, gypsum, and the other mineral colors that are oin ployed. Black Teas. The basket and pan-fired Japan teas, as well as the China teas that may bo included uuier the ceneral heading of 'iblaek teas," get their color from tho firing or toasting process, but mineral coloring matter is alio frequently used to give a certain desired commercial appearance. Tho firing and the coloring, as in the green teas, largely conceals the iden tity of the tea, and permits tho use of the very cheapest teas, to argue nothingfor the deteriorating effect of excessive firing.Jwhica must to resorted to when a very cheap prod uct Is used and an extreme color desired. Beech's Tea (Sun-dried). Concerning sun-drleU teas the peopleof the Pacific Coast have heard but little and know less, although It is extensively used where it is known and understood. We are told that when tea la so poor It cannot be sold at homo or safely shipped to tho English markets, It li shipped to America; that we will drink any thing. That may possibly be one of tho rea sons we havo not been offered sun-dried teas. They were good enough to send elsewhere. The sun-dried teas being sun-cured, no coloring matter Is used, hence nothing but pure tea leaves can be employed; for unas sisted by manipulation or coloring, all at tempts at adulteration or tho introduction of foreign leaves or material would bo bold and glaring. That It is, therefore, sweeter and fat more fragrant than the artificially colored green teas and the manipulated basket or paa-iired teas, you hardly need be told. That it i more healthful than the miueral-coloiid teas, is also opparenL That it is more est en sive, is aho true; and that is another reason you have never seen it There is nc t so much profit in it as there is iu the cheap adulter ated and colored teas. About the Cast of Tens. According to the custom-house reports, the amount of tea received at San Francisco last year (10) was 6,6-10,137 pounds, and the value Ji-o'-V'O, or a fraction over 13c per pound. There are your enormous profits, and there you will probably find the chief reason why mst of you never heard of a sun-dried tea. As the sun-dried Teas have bo mask, they are compelled to be abso lute pure and of betu-r quality than the aTfficially colored and manipulated teas. Hence the margins on them are smaller, and jnauy dealers dou't care ebout handling them, tnd you kuow ndlhin? about them. "Beech's Ten," gua-autepd tn be the pure sun-cured leaves, 1.4 now offered to the peoplo of the Pacific Coast, It will be a revelation to you. You doubtless never saw any nat ural leaf. Have your grocer break open a 1 ackae. It will o found In cilor to be Just between the artificially cuiorc-d gret-n aud thebiaik teas, and the drawn tea presents a clear, brilliant canary color, of delightful fragrance. It is offered to the people at 60o per pund, the same price that many artifi cially colored teas arc sold for. But its guar anteed purity makes it mure economical to use; for a less quantity, say about twenty grains, ;is required per cup. As there are 7,Co0 grains to a pound, there will be seen to bo between three aud four huudred cups to tho pound, or at the rate of about one fifth of a cent per cup. Its economy is therefore manifest It is put up in one-pound packages only, in patent air-tight and moisture-proof parchment, with the trade-mark that is found at the bottom of this article plainly printed on tho package. It fs sold in this form for two reasons; one is, that the original strength and aroma is preserved; and second, thero can be no deception, which would bo qui to possible if It were sold In bulk, without tho name aud trade-mark attached. " Caution. Recollect that the margin of profit Is so much smaller on Beech's pure sun-dried teas than on the artificially colored teas that yoa won't get it If tea by any other name can bo put off on you.
