U. 11 I UstVab VI.U1I FACTS ABOUT THE TEA WE DRINK. Bat Uw people know that there Is such a thins aasua-cureJ te Inexlstencs, and fewar have seen it, But thare Is, aud It li of all taaa the swoetust, purest, and most fragrant You asU ut if h,vr It Is that It Is not offered for lt and U.at ou know nothing of 1L That Is PMnwered easily: but It Is necessary to present first a few dvtalls. The public only knows two peiR-ml classes, yIz., the grea and the blaci teat. (ircrn Teim, Few people l;n-w that the bright bluish greeu c'lor vi i':c ortiiuary tvm exposed In tho irindowj U not the natural color. TJn P'eniant as the fart may be, It Is nevertheless artificial; Prussian Hue, silica, gypsum, plumbai!, and other uuhealthful mineral ool ra being used for this purpose ThecfTect is twofold. It not only ir.akes the tea a bright, shiny, u: tractive green, but also permits the use of "otr-culor" and worthless teas, which, oui'o under the green cloak, are readily worked off asa good quality of tea. Thoabom Inahte coloring raetice even admits of the use of foreij;u substances, and the Kitglish gveruuiear, which looks closer Into the gen uineness of its k'aples than ours, bus in some of tho u'.lescd "fi:iest " of teas found redrted leaves, straw, framenrs cf matting, rice husks, and .. i. low leaves. In fnct, it ia openly v.ated by an English authority that hundreds of thousands c f pounds of feloe, ash, aud wil low leaves are au::ua!y imported as tea, which wi:h u: the coloring process would bo lmi ossible. They report tea as o::cof tho most notoriously adulterated articlesof commerce. The temptation to make sweepings and bad tea into a merchantable product with a few cents' worth of green coloring matter Is too strong to withstand, and the worthlcf.sness of the trash that often finds its way to this mar ket labeled "New Crop," "Pest Quality." "Green Tea," etc., would simply tibtoui.d the public if revealed, to say nothing of the uu hcalthfuluess of tho 1'russiau blue, plum bago, gypsum, and the other mineral colors that are employed. DlacU Tens. Tho basket and pan-fired Japan teas, aa well as the China tea that may be Included under the general heading of " black teas," get their color from tho firing or toasting process, but mineral coloring matter is also frequently used to give a certain desired commercial appearance. The firing and the coloring, as in the green teas, largely conceals the iden tity of tho tea, and permits the uso of the very cheapest teas, to argue nothinglfor the deteriorating effect of excessive flring.'which must bo resorted to when a very cheap prod uct is used and an extreme color desired. BeecV.'a Tea (Sun-dried). Concerning sun-dried teas thepcopleof the raclilc Coast have heard but little and know less, although it is extensively used where it is known and understood. We are told that when tea is so poor it cannot be sold at home or safely shipped to the English markets, it is shipped to America; that we will drink any thing. Tb.it may possibly be one of the rea sons we have not been offered sun-dried teas. They were good enough to send elsewhere. The sun-dried teas being sun-cured, no coloring matter is used, hence nothing but pore tea leaves can be employed; for unas sisted by manipulation or coloring, all at tempts at adulteration or the introduction of foreign leaves or material would be bold and glarinjr. That it is, therefore, sweeter and fal mora fragTaut than the artificially colored green teas and the manipulated basket or pan-fired teas, you hardly need be told. That It is more healthful than tbe mineral -colored teas, is also apparent That it is more expen sive, is also true; aud that is another reason you have never seen it. There 1 nrt go much profit in it as there is in the cheap adulter ated and colored tea. Abont the Cost of Teas. According to the cuetom-house reports, the amount of tea received at San Francisco last year (18S0) was 0,843,137 pounds, and the value 150,290, or a fraction ever i3o per poand. The coifcumer, of which the reader was one, paid for that l?c tea all the way from COc to 11 per pound. Ia other words, for that f95fi,2W worth of tea the consumer paid between four and five millions of dollars. There are your enormous profits, and there you will probably find the chief reason why most of yon never heard of a sun-dried tea. As the sun-dried teas have a mask, they are compelled to be abso lute pure and of better quality than tho aryflciaily colored and manipulated teas. Hence the margins on them are smaller, and many dealers don't care about handling them, tnd yov know nt ithlng about them. But It is the object of this article to tell yon where you can got them, and what to ak (or, and all about them. "Eecch'i Tea." "Beech's Tea," guaranteed to to the pure sun-cured braves, lj now offered to the people of the Pacific Coast. It will be a.revelation to you. You doubtless never saw any nat ural leaf. Have your grocer break open a package. It will bo found in color to be just between the artificially colored green and the blark teas, and the drawn tea presents a clear, brilliant canary color, of delightful fragrance. It la offered to the people at 60o per pound, the same price that many artifi cially colored teas are sold for. But Its guar anteed purity makes it more economical to use; for a less quantity, say about twenty grains, ,1s required per cup. As there are 7.CS0 grains to a pound, there will be seen to be between three and four hundred cups to the pound, or at the rate of about one fifth of a cent per cup. Its economy Is therefore manifest. It Is put up in one-pound packages only, In patent air-tight and moisture-proof parchment, with the trade-mark that is found at the bottom of this article plainly printed on the package. It is sold in this form for two reasons; one Is, that the original strength and aroma is preserved; and second, there can be no deception, which would be quite possible if it were sold In bulk, without tho name and trade-mark attached. Caution. Recollect that the maririn of profit Is so much smaller on Beech's pure suu-drled teas than on the artificially colored teas that yom won't get it If tea by any o.her name can be putoffonyoa. Aik for Pure'As 'Childhood: If your grocer docs not hare it, ht will get It for you. Prlp, ore tier pomM. The abor, trde-marlc and price Is plainly printed on each package.
