The basket and pan-fired Japan teas, as well
r.s the China teas that may bo included under
the seneral hcadius of "black teas," get their
coor from tho firing or toasting process, but
mineral coloring matter Is also frequently
u;ed to give a certain desired commercial
appearance. The tiring and tho coloring, as
In tho sreeu teas, largely conceals tho Iden
tity of tho tea, and permits tho uso of tho
verycheapcrt teas, to arguo nothing'Ifortlis
deteriorating effect of excessive firlngjvrhich
must be resorted to when a very cheap prod
uct is used and an extreme color desired.
ISeeeh'a Tea (Sun-dried).
Concerning sun-dried teas the pcopleof ths
Pacific Coast have heard but little and know
less, although it Is extensively used where it
is known and understood. Wo are told that
when tea is so poor it cannot be sold at home
or safely shipped to the English markets, it is
shipped to America; that wo will drink any
thing. That may possibly bo one of the rea
sons wo havo not been offered sun-dried teal
They were good enough to send elsewhere.
Tho sun-dried teas being sun-cured, no
coloring matter Is used, henco nothing but
pure tea leaves can be employed : for Unas
sisted by manipulation or colnrlng, all at
tempts at adulteration or the introduction of
toreign leaves or material would be bold and
glaring. 1 nut it is, therefore, sweeter and ful
more fragrant than tho artificially colored
greea teas and the manipulated basket or
pmi-lired teas, you hardly need be told. That
it is uio.-e healthful than the mineral-colored
leas, is ol-o apparent. That it Is more expen
sive, is abo true; and that Is another reason
you have never seen It. There Is net so much
ptofit In it as there Is lu the cheap adulter
ated aud colored teas.
About the Cost of Teas.
According to tho custom-houte reports, the
amount of tea received at ban Francisco last
year (1850) was G.M0.137 pouuds, and the value
J.;,2?0, or a fraction over 13c per pound.
The corliumer, of which the reader was one,
paid for that l"c tea all the way from COc to
?1 per pound. In other words, for that tJ5C,259
worth of tea the consumer paid between four
and five millions of dollars. There are your
enormous profits, and there you will probably
find the chief reason why most of you never
heard of a sun-dried tea. As the sun-dried teas
have 710 mask, they are compelled to be abso
lute jy pure and of better quality tbau the
a"ficial!y colored and manipulated teas.
Hence the margins oa them are smaller, and
many dealers dou'tcareabout handling them,
tnd you know nothing about them. But It is
the object of this article to tell you where you
cau get them, and what to ask (or, and all
about them.
'I:eech,sTea.,
" Beech's Tea," gna-antecd to he the pure
sun-cured leaves. Is now offered to tho people
of tho Pacific Coast. It will be a.revelation
to you. You doubtless never saw any nat
ural leaf. Have your grocer break open a
1 acnage. it will be found In color to bo Just
between the artificially colored areen and
the black teas, and the drawn tea presents a
clear, brilliant canary color, o( delightful
fragrance It is offered to the people at 60c
p.-r pound, the same price that many artifi
cially colored teas are sold for. Itut Its guar
anteed purity make It more economical to
use; for a les quantity, ur about twenty
grains, ;ls required per cup. As there aro
,m0 grains to a pound, there will be sun to
be between three and four hundred cuns to
the pound, or at the rate of about one fifth of
a cent per cup. Its economy is therefore
manifest. It is put up in one-pound packages
only, In patent air-tight and moisture-proof
parchment, with the trade mark thatls found
at the bottom of this article plainly printed
on the package. It is sold in this form for
two reasons; one is, that the original strength
and aroma is preserved; and second, there
can bo no deception, which would be quite
possible if It were sold in bulk, without the
name and trade-mark attached.
Caution.

much smaller on Beech's pure sun-dried teas
man on the artificially colored teas that Toa
won't get it if tea by any other name can be
