Il not, you have a real flavor tre a t coming. New cooks will like using fish be cause it is so easily and quickly p re pared. T here are so many varieties to use, you need run into no ru t even though you serve fish often. You can substitute fish for m eat easily because, it. too, is a good source of protein in addition to pro viding such im po rtan t m inerals as calcium , phosphorus, iron, copper and iodine. Those of you who live inland would do well to fortify your iodine supply by eating fish m ore often, as it's difficult to get enough in any other way, except m edici nally. Overcooking is one of the faults m ost frequently found in the p rep aration of fish, for m any people do not realize that fish is really tender. Broiling and pan-frying a re good m ethods to use, as is baking. You'll find th at fish served in a casserole takes little tim e and can be really delicious. The tim e r e quired for baking is short as the food really only needs to be heated. F resh, canned or frozen fish m ay be used, w hichever is available to you in the recipes I'v e included to day. ‘ Stuffed H alibut Steak. 1 dozen oysters 1 cup crack er crum bs % teaspoon salt ■k teaspoon pepper 1 tablespoon chopped parsley 2 tablespoons butter, melted 2 slices halibut, cut % inch thick 1 tablespoon lemon juice F a t for basting LYNN CHAMBERS' MENU •Stuffed H alibut Steak Boiled Potatoes A sparagus Lemon B utter Crisp G reen Salad Whole Wheat Biscuits B everage C arro t Sticks Stewed R hubarb Sugar Cookies •Recipe given Make a sauce by chopping onion, carro t and green pepper until fine; add vinegar. Mix thoroughly and add salt, parsley, thym e and bay leaf. Sim m er sauce for 20 m inutes; re move bay leaf. Place m ackerel in greased baking dish, pour sauce over all and bake in a hot (400 degree) oven for 25 to 50 minutes. Baked Scallops (Serves 4) 1 onion 1 green pepper 6 stalks celery 6 m ushroom s 2 tablespoons butter 1 pint scallops 1 can m ushroom soup Dash of nutm eg, lemon juice and salt G rated Swiss cheese Cut onion, green pepper, celery and m ushroom s into sm all pieces and cook in butter. Add to this the scallops and w arm through th o r oughly over low heat. P our in m ush room soup which has been seasoned with the nutm eg, lem on juice and salt. P our into a g reased baking dish and top with g rated cheese. Bake in a m oderate (350 degrfce) oven for 25 to 30 m inutes. B uttered crum bs may be used for topping in place of the cheese. C rab Cakes. (Serves 4) 1!4 cups crab m eat 3 eggs 1 cup soft bread crum bs 5i cup melted butter or fat drip pings 2 teaspoons lemon juice 1 teaspoon minced green pepper 1 teaspoon minced celery Vi teaspoon salt 54 teaspoon pepper Mix crabm eat, beaten egg yolks, crum bs, m elted fat and seasoning and blend thor- oughly. Fold in stiffly beaten egg w hites and turn into well greased cu stard cups. Set these in a pan of hot w ater and in ______ a m oderately hot (375 degree) oven for 25 minutes. j These crab cakes are truly deli cious served with lobster sauce. r \ O YOU want to add som ething A -' new but simple to your own hom e Just for the general purpose of brightening it a bit? Or, do you have a long list of wed dings and showers to attend which will require gifts of one type or a n other? I know of no woman who is satis fied with the num ber of aprons she has, especially when she sees one lovelier than some she has. If you want to m ake really pretty aprons, I'd suggest you use organ die or another delicate fabric for the m ain p a rt of the apron. Half aprons are a good idea inasm uch as organdy certainly will not be used for the evening dish chore. As for trim m ings, there is no end. You m ight like to ruffle the heart- shaped pockets with som e fragile lace and pipe the edges with m ore lace. If you can do neat applique work —or can learn how—any of the floral designs are good.
