As the story goes, a woman
was sitting in a staff meeting
and had a dessert called fen
yuan, a sweetened tapioca
pudding, with her. She de-
cided to pour the tapioca into
her iced tea — and boba tea
was born.
Since 2018, at least 32 boba
tea shops have opened in the
Portland metropolitan area,
giving the region 55 shops in
total — not including restau-
rants and food-focused estab-
lishments that have boba on
their menu. The field includes
international boba tea chains
like Ding Tea, Sharetea and
T4 but also a wave of locally
owned operations. Tea Chai
Te has also since expanded to
three other locations.
When Steve Chao and his
wife opened 5 Flavor Cafe in
early 2018, boba was still not
a household name in the Bea-
verton area neighborhood.
“The pitch was, we spent 15
minutes talking about what
boba is because people didn’t
know,” Chao said. There was

a lot of sampling of toppings
and flavors for new custom-
ers.
The influx of boba shops
has only driven more expo-
sure for the drinks, in turn
growing the market for ev-
eryone. Portland saw its first
major chain at the start of
2019, when Taiwanese boba
powerhouse Ding Tea arrived
in Lents.
The growing field of com-
petitors hasn’t stopped more
shops from opening, even
during the pandemic. Several
shop owners said the shut-
down has not affected them as
much as other food establish-
ments, primarily because of

location recently opened
on NW 23rd Avenue, join-
ing existing franchise out-
lets in Clackamas, Bethany
and Beaverton. Like many
of the major boba players,
the T4 franchise began in
Taiwan in 2004, but it has a
much smaller presence in
the United States than other
chains.
Koon said the target audi-
ence for boba is mainly peo-
ple under age of 40, but it’s
something more and more
people are still learning about.
With the endless possi-
bilities for re-invention and
creative presentation, boba
has also found explosive pop-
ularity on Instagram. Fans
can’t seem to resist sharing the
brightly colored drinks with
assorted toppings served in
mason jars, light bulb cups,
with soft-serve and over waf-
fles.
“Boba tea is becoming a
culture for a younger genera-
tion,” Koon said. “People taste
it one time, they’re open to
more.”

ple take the time and trouble to
prevent the snooping.
Apple originally planned
to released the anti-tracking
feature in September, but de-
layed it. Facebook spent part of
the delay blasting Apple for a
change that it says could make
it difficult for smaller apps
to survive without charging
consumers. At the same time,
Facebook has acknowledged to
investors that its own ad reve-
nue could also be hurt.
On the product front, Apple
is rolling out new iMacs with
better cameras and speakers
for improved video meetings
and sound and new iMac key-
boards with the same finger-
print ID sensor that unlocks
iPhones and iPads.
The latest iPad Pros will
work on ultrafast 5G wireless
networks that are still being
built out.
