She de- cided to pour the tapioca into her iced tea — and boba tea was born. Since 2018, at least 32 boba tea shops have opened in the Portland metropolitan area, giving the region 55 shops in total — not including restau- rants and food-focused estab- lishments that have boba on their menu. The field includes international boba tea chains like Ding Tea, Sharetea and T4 but also a wave of locally owned operations. Tea Chai Te has also since expanded to three other locations. When Steve Chao and his wife opened 5 Flavor Cafe in early 2018, boba was still not a household name in the Bea- verton area neighborhood. “The pitch was, we spent 15 minutes talking about what boba is because people didn’t know,” Chao said.
