' Chicken prepared in any wy Is always an appreciated dish when on a picnic. Mrs. I. 8. McHatton has sent the following redpe; Spring Chickens Make a beautiful brown gravy as follows: Take a quantity of fat (I use half butter and half salad oil), frat it in a spider, heat, and then stir a two or more tablespoons of flour, stirring all the time until a golden brown. Then add cold water until thick as cream. It will thicken as it cooks. Have the chicken all ready cut up. Put in the gravy, add two onions, and a bunch of celery, cut up, and as many potatoes as one needs. Season with pepper and salt to taste. If I have a green pepper and sage I put .them in too. One cup of butter or other short ening. . Two tit. One cup, of nuts, chopped. Three and one-half cups' of flour. One level teaspoon of soda. One level teaspoon of salt. Cream sugar and butter, add eggs, aift flour, soda, and salt and mix some flour with nuts. Mix all to gether and put on a cake board and knead like bread. Form into a long candy bar three Inches square and let stand all night. Next morning slice thin and bake. This makes three dosen cookies. Mrs. H. 8. Brownfield, Springfield, Oregon. Economical Cake One and one-half cups . of flour. One cup of sugar.1 One cup of ground cholocats. Three teaspoons of baking powder. One cup of milk. One egg. One-third cup of melted butter (cooled). Sift together three times, the flour, sugar, chocolate, and baking powder. Add milk, well beaten eggs and melted butter. Beat well. Bake in layers in moderate oven about 15 to 20 minutes. Sour milk can be used instead of sweet milk if one teaspoon of soda is substituted for baking powder. The icing that I use for the cake above is as follows: Two cups of powdered sugar. Two tablespoons of ground chocolate. Three tablespoons of, hot coffee. Two tableHpoons of melted buttur. Mix ingredients in order riven and beat until smooth and then spread on cake. Mrs. B. F. It follows: Date Nut Cake Over one cup of dates chopped fine, sprinkle with one teaspoon of soda and pour over one cup of boil ing water. let stand for few min utes. Work mixture until smooth. (Use egg beater.) Add one cup of butter. One cup of sugar. One and one-half cups of flour. Two eggs well beaten. One cud of nuts. .This makes three good layers. Mrs. H. J. Beam and son Harley of leerhorn, Mr. and Mrs. Leenan Ream of Cottage Grove, Air. and Mrs. Jergen Ho 5m of Wauna took a motor trip to San Francisco to tee Norman Ream who is on board the U. S. S. New York. He is nt present gunner's mate aboard the battleship, was unable to get a shore leave during their visit. All went on aboard the ship and had a brief visit including Mr. and Mrs. Robert Campbell of Rich mond, Oil., and Miss Edith Conley who 1s making a visit in California. They returned home Saturday evening ach one going to their respective homes. Mr. and Mrs. Alfred Fherson of Hnlsey were guests of Mr. and Mrs. N. N. Kaldor Saturday and Sunday. Kir. and Mrs. William Park called to seo Mr. Thienes Wednesday who has been sick since the first part of June. Mr. Thienes has been home a week from the hospital where he was taken for treatment. His wife who had been visitinir in Indiana was called home on account of the serious illness of her hushnnd. Mrs. E. F. Ream is taking another outing visiting with her daughter and family neor Cottace Grove. Mrs. Horace Morris is going to ftelknap Springs Friday on a business trip. Miss Ethel Thienes made a trip to Blue River Wednesday afternoon and colled to see Mrs. Dayton Thompson and baby. Hugh Godord and Vernon Neet were among those of the Boy Scouts who went to Blue River camp Sunday for the first period. Mr. and Mr. Barney Oldfleld and family spent all day in Eugene Wed nesday.
