New uiitomatic cooking tiiuks were put lu to htiudle the gallon cans and It was thought that there would he little use for the open vat nystcm formerly in use, hut it has been found necoflsnry to employ it to supplement the automatic system. Thin new Hyutcni avoids the ne cessity of handling the cans, as they travel automatically from the machine which add the syrup, through a heating tank to the Healing machine, then through the main cooking tank, and then through a tank of cold water, which re duces the heat so that they can he hand led. Cherries are graded in size by ma chines nnd pitted by machines, the stem ming nnd filling of the cans being about t?:o only work done without the aid of the machinery. The stemming is done by women arid girls. They begin working ut G and O.ltO hi the morning and quit about 4 in the afternoon. These hours are nec essary becauso all cherries which have been stommed must be in the cans and cooked the same day. When a full crew is working it is often 8 o'clock or later iu the evening before the canning and cooking crew completes its work, The local cannery shipped some cher ries to Snlcm to be canned this week. The cherries there aro later than here and the local cannery may help out the Salem concern by canning cherries from there after the bulk of the cherry rush hero is over, it was stated by J. O. Holt manager of the local cannery Friday. II stated that there is no trouble experi enced in getting plenty of help, but that It is hnrd to get experienced help which thoroughly undertsands the business, The preponderence of female help wa noticeable from the fact that some of the light trucking Is being done by girl Negro victim shot down in Collingsville avenue, East St. Louis.
