For the general farm, where ade quate housing and management can be given, a side line unit flock of 400 hens is very profitable, according" to a report made by the poultry com modity group, Agricultural Econom ics conference, held at 0. A. C. in January. For farms that are not interested to this extent it is recom mended that only a sufficient number of hens be kept to supply the home table, preferably about 24 hens or less. In making meringues, use 3 table spoons of sugar to one egg white. Place in a moderate oven that will take it about 15 minutes to brown and you will have a meringue that will keep its shape. If soft custards curdle, beat vith a dover egg beater till smooth. Oranges are better than milk for the mid-morning lunch. They are high in vitamine content, and do not deaden the appetite as milk does. Animal crackers dipped in choco late make a nice surprise for .the school lunch box. Fruit preserves may be made with far less sugar if salt is used. They must be kept a few days before using, so that the salty taste is no longer distinguishable.
