A few stuffed dates, a p late of cookies w ith a bit of fru it, or fresh fru it Itself, is easy to p rep are and usually avail able. F o r d esserts w hich are more elaborate and ta k e tim e to concoct th e following will be su g g estive: Chocolate Crumb Pudding. T ake one cupful of cuke and bread crum bs mixed, add one and one-half cupfuls of milk, oue and one-half squares of unsw eetened chocolute and three-fourths of a cupful of sugar. Cook in a double boiler until a smooth pnste is formed. To three well-beaten egg yolks add one-half cupful of milk, tw o tuldespoonfuls of b u tter, one- fourth teuspoonfui of s u it; s tir ami cook until it thickens. Add vanilla nnd put into a greased pudding dish. Bake in a m oderate oven 25 minutes. When slightly cool, spread w ith a m eringue m ade w ith th e three egg w hites and one-half cupful of pow dered s u g a r ; replace in the oven until th e meringue is a light brown. Chill before serving. Prune Fluff Tart. Stone and p ress througn a sieve 20 medium-sized prunes. Beat the w hites of th ree eggs until stiff, then add grad ually six tablespoonfuls of sugar, and the prune p u re e ; add a teaspoonful of lemon Juice and pour th e m ixture into a partly baked p astry shell. Bake until th e m ixture is se t— about 20 minutes. Serve with a cu stard made of the egg yolks or heap cream over th e top. Rice-Coconut Tart. Cream two tnhlespoonfuls of bu tter with one cupful of sugar, add the beaten yolks of th ree eggs nnd a te a spoonful of cornstarch rubbed smooth with a little milk. Reserve tw o table- spoonfuls of coconut from one-half cupful and add th e rest to the custard m ixture. Add one-half cupful of cooked rice which has been soaking In one and one-half cupfuls of milk, nnd lastly a h alf teuspoonfui of vanilla. Four th is filling into a deep pastry- lined pie plate and hake until th e mix tu re Is set. Brush th e top w ith cur ra n t Jelly and sprinkle w ith th e re served coconut. S erve very cold.
