New owners fuse old with new
The Brew Coffee and Tap House undergoes complete restoration

INDEPENDENCE —
Stepping into the new Brew
Coffee and Tap House on the
corners of C and Main
streets in Independence, it
bears no semblance to the
old café it once was.
Business owners Mitch

worked hard to restore the
old building, from a fresh
coat of paint on the out-
side, to a full gut and re-
model on the inside. The
streamlined style fuses the
old with the modern, with
histor ic exposed br ick
combined with touches of
hardware. At most tables,
outlets provide energy for
those wishing to charge
cellphones or laptops.
“It’s a complete restora-
tion,” Mitch said. “The
whole idea of the build was
a fusion of historical and
more trendy items, with a lot
of repurposed furniture and
hardware and things to look
at.”
Tabletops were reclaimed
from an old Red Robin
restaurant. Benches are
church pews made in Dallas
in the late 1800s. The doors
lining the penny-topped bar
are from the Monmouth-In-
dependence-Dallas area,

chairs were reclaimed from
the Willamette Law Library.
“The lighting fixtures
above the bar and on the
wall were custom made,”
Mitch said. “We designed
them and had them made.”

Mitch and Cathy have
long histories in Dallas.
Cathy’s family has a street
named after them – Holman
Avenue. Teal Creek and the
mill that was there are
named after Mitch’s family.
The couple lives in rural
West Salem, and have often
driven through Independ-
ence on their way to visit
their son, an Oregon State
University graduate. They
both attended school at
Western Oregon University,
and own tanning salons in
Salem, Bronze Planet.
They’d been thinking of di-
versifying their business for a
while, and when the oppor-
tunity to rent the building on
C and Main came up, the
Teals were ready.
“This building was beg-
ging to be a coffee and tap
house,” Mitch said. “The po-
tential was just huge. The lo-
cation, the historic building,
everything.”
