W HAT IS A GOOD M AKER. BU TTER- A g ood buttermaknr must be som ething more than a maker of g ood butter. Ho must thoroughly understand how to handle milk so as not only to make g ood butter but to get all tho butter out of it there is a constant tendency in tho cream to waste butter fa t It be gins in the separator. If the separator is not set just right, is not run at the proper speed, if the temperature of the milk when it goes through tho machine is not right, butter fat is thrown over into the skim-milk. If the cream is not ripened properly butter fat is wast ed. I f the churning is not don properly and at the right tempera ture and churned long enough and stopped at the right time, butter fat is wasted. It is very easy for the unskilled buttermaker to waste fifthteon or twenty pounds o f fat in a day, depending upon tho amount o f milk handled. F or that reason it is better to pay a thorough ly com petent man over $100 a month, rather than accept the services o f an incom petent man for nothing. The latter may waste during the month several dollars worth o f butter fat. Form erly but- termaking was an art, now it has becom e a science.— Western A g riculturist. Oats are head in g rather short in somo sections of the W illam ette valley. Barley is beginning to ripen and turn yellow. Tho first crop of alfalfa has been harvested and the second crop is grow in g nicely. A large amount of clover has been cu t and safely se cured du ring the weok.
