As In the ease of other-aromat ic plants, the source» of the urouia tiro not well understood. Arotua usually depends upon such minute particles of substance that even the delicate re actions in the chemical laboratory are frequently tnadequuto to discover them. The high prices which are paid, for Instance, for certain wines tire based upon their flavor or urouin, and yet this flavor or aroma ennnot be discovered by chemienl nnnlysis. It Is not surprising, therefore, that the substances which contain the flavor or aroma of hops have never been as certained with certainty. There Is a theory that they are closely associ ated with the soft resins contained in the lupulin, or the hop flonr, wh oh Is found between the bracts o f the cone and which Is really the essential part o f the hop plant. As for the color o f the hops, various preferences prevail, some preferring the varieties which are entirely green, while others think the yellowish greet) is preferable. In this country the yel lowish kinds m usually preferred, While fn Uei'iuuny the green ones have the call. Inasmuch as the brewing value of hops depends largely upon the lupullu |c acid and the soft resins and the American hops are unuannlly rich In soft rosins, American hop growers need have no fear of entering the prize competition at C hicago under the rules which have been adopted for the Jury which is to Judge the hops.
