is so badly a d u ltera ted that it is n ot fit
fo r the hum an stom ach . O h . for a g e n ­
erou s dish o f apple b u tter lik e m o th e r
used to m ake w h tn I w as a ch ild ! O h ,
th o se g o o d old d ays on the farm w ill
n ever be fo rg o tte n ! W e had g o o d tim es
then, and g o o d th in g s to eat. to o . E v e r y
fall when The R ain bo w apples b e g a n to
g e t ripe all hands and th e c o o k b egan to
p rep are to m ake apple butter.
It t o o k tw o o r three d ays to g e t re a d y
and m ake th e apple butter, too. W e had
to pick up and grin d about twenty-
bu shels 6 f sw eet apples fo r cid er. T h e
cid er had t o be m ade the last th in g , th e
day before the apple butter w as m ade,
so it w ou ld be sw eet. A ll d av lo n g and
som etim es a w a y in to th e n ig h t all hands
had to peel and co re apples to “ fill in
w ith .” T h e m orn in g o f the apple b u tter
b o ilin g b y th e b reak o f d ay m oth er had
the cid er on to boil. S h e k ep t it b o il­
in g c o n tin u a lly u n til n oon , w hen sh e b e ­
ga n to put in th e so u r peeled apples. A s
so o n as th e apples co o k e d to a pulp she
b e gan to stir. N ow perh aps this w as the
m ost difficult part o f th e w o rk , fo r the
stirrin g had to con tin ue for six o r m ore

b u tter w ith ease and com placen cy. W hen
it w ou ld n ot run o ff th e paddle, and w as
o f a d ark rich c o lo r , it w as sufficiently
cook ed to k eep . T h e n it w as dipped ou t
in jars, la rge ja r s th at w ould hold three
o r fou r g a llo n s each. W h en th e y w ere
co ld a cloth w as tied o v e r them and th ev
w ere put in th e cellar.
