strictly pure is the w ater from
w hich this ice is m anufactured
and through w hat a process it
m ust pass before it becomes ice.
First, it is boiled by a steam
process, then it passes into another
large steel ta n k where it is boiled
again and all of the air removed
from it, w hich rises to the surface
in little bubbles with w hatever im ­
purities the w ater m ay have co n ­
tained and is skim m ed off by a
sim ple process. T he w ater n ex t
passes through a large charcoal
filter, thence through a cotton b a t­
on filter into a large storage tan k
from which it passes into the large
square buckets or vessels in w hich
it is frozen in 200 pound cakes.
