The dairy and food commission of Minnesota, has given out for pub lication a receipt for tbe manufac ture of jam exposing tbe method of unscrupulous manufacturers of im- itation fruit preserves. Tbe expo- sura reads as follows: "1 hava seen raspberry jam made in large quantities from the follow ing ingredient f : The base of this jam was apple parings and oores as prepared and packed in barrels by apple evaporators. These paringB and core# were first placed in huge copper «team kettles with ¡sufficient water and glucose, tbe latter for sweetening, and boiled until the ua waa thoroughly cooked. Then it wm strained through filtering material to make a clear syrup.
