Sold by V. 15 l'eroenu :V writer in a recent issue of the Scientific American has consider able to say on the above subject, from which are gleaned the follow ing facts: Sturgeon has been much neglected until recentry. and its commercial importance has been much underestimated. It is really a valuable food fish, and its neglect may be accounted for in a measure by the fact that in the month of May, when sturgeon are the most abundant, the maiket is J well supplied with other and choicer varieties of iish. Xew York packers have met and over come this dillicuity in th'- :'Uow in; manner: the sturgeon as soon as caught ami dressed is placed in a large freezer, wnere, by a pat-; ented method, they are frozen sol- id as thev lie in boxes. In Salem. 1 N. J., where this procr-tiS is ap plied, 0,G2f Kutds of sturgeon can be frozen every seven hours. After freezing they are taken from the boxes and stored in largi rooms, through the center of each ol which a freezing apparatus ex tends, which is clmrged anew each day, enabling the keeping of fish for months until there is a demand for them. The sturgeon range from Georgia, in winter, to St. John's, N. 13., in summer. Man' fishermen are constantly engaged1 in the industry, and large gill nets, each about 200 fathoms long, with meshes a foot in size, arc used. The Delaware river is the princi pal fishing ground. The fish en ter this river about the 2"2d of May, and Siich extreme numbers that it is necessary to use nets of about 50 fathoms, larger ones be- ingat that time unmanageable. The avtrrairc catch is about 25 or 30 fish at every cast. This lasts a!out two weeks the fish moving stead ily up the stream towards the head of the river. They make a sud den disappearance about June 10th. The usual way of preparing sturgeon for market is by smoking. After smok ing for a single night thev are ready for shipment anywhere. The nrcneratiou of caviar is an important part of the business. Of this thetc are two kinds the soft and the hard the latter beimr worth about twice as much as the former. To make the best article the roc is taken from the sturgeon 1 as soon as possible after the fish has been caujrht. After it is finished it is packed in casks lined with napkin Jmen, , , . . , ... r J:ir sa'1 v'lt" table salt. The kegs ltold about 150 pounds each. Properly cared for, it will keep a year or longer. It is sometimes canned iike fruit, when it can be transported to warm countries, keeping indefi nitely. It is largely used through out Europe, and in Russia not a meal is prepared which does not include this delicacv. In the western and southern states it is rapidly growing into favor, and in the south, early in the spring, tiie best hard caviar is said to be from 15 to 20 cents per pound 5& (succassoa to pacb & allkn.)
