In his experiments to determine the heat-eotxhictinif power of linen, cotton, woo!, and silk, Sir Hum prey Davy found that not onlv that these materials conducted heat iu the order given above, linen lu.-iiig the best, but also that the tiirlitncss or looseness of weaving possessed an import ant influence. It is therefore evident that in the selection of winter clothinpr, and especially that to be worn next to the skin, the materials ot" least con ducting power, as wool and silk, should be loosely woven. As regards the external gar ments the same rides apply with equal force, but in tins case care should be taken to remove over coats and shawls when in a warm room ; especially should this pre caution be observed in the instance of the furs worn by ladies. The habit of wearing these articles for hours in succession while shopping and visiting, often so weaken the j lowers of resistance in the wearers that they become the ready vic tims of intlamation of the throat and lungs. To such an extent does this occur in New York that many of the most skilful physicians advise their patients to discontinue the use of furs, and the advice is often followed with the most satis factory results. A' correspondent of the Doston Post has found an honest carpet bagger that is, a man who is a good deal more honest than carpet baggers usually are, inasmuch as he frankly acknowledges the iniq uity of the laws under which he holds a very remunerative ollice. The carpet bagger in question is tax assessor and collector in a par ish of Louisianna, a position which he obtained through the influence of his brother, who is also a carpet bairger from Vermont. This indi vidual according to his own account assesses and collects taxes each year to the amount of 200,000, the rate of taxation in the rural parish he is in being more than three times the rate in the city of Boston. For the assessment of this tax he receives a commission of live per cent, with ten per cent, more for collection, making an aggregate income of 30,000, out of which he is obliged to pay the salary of a deputy and certain oflico expenses to the amount of 2,000, leaving him a net income of 28,000. This carpet-bagger frankly acknowledg ed that 3,000 a year would be a liberal remuneration for the ser vices lie renders, and further vol unteered the information that the laws which permitted such extrav agant pay to the officeholders were passed owing to the choice of leg islators being in the hands of ne groes who vote as they are direct ed by the carpet-baggers. "They vote just a. 1 say iu my parish,' said this conscientious carpet-bag- i ger; "they come to Massa George, ! as they call me, for advice in every thing, because they know I go for MjfM (liMiit, und come from the good old State of Vermont." Thus it is that the white population in the South .ire ground to the earth by exorbitant taxation levied to enrich the carpet-baggers who con trol the negro vote, a condition of affairs which the reelection of Grant would serve to maintain in definitely. A verv nice cake is made as follows, and it win keep well also. Flour three and one-hair pounds; sugar one and one-fourth pounds; butter one pound; water one pint, having one teaspoouful of saieratus dissolved in it. Roll thin and bake on tin sheets. Beif stake Smoihet eil icih Onions Cut up six onions very line; put them into a saucepan with two cupful of hoi water, about two ounces of good butter, some pepper and salt; dredge in a little flour; let it stew until the onions are quite soft; then have the steak broiled put it into the saucepan with the onions, let it si:n iner about ten minute, and send to the table very hot. G'ligtr &wps Butter, lard, ami brown sugar, ijf each one-fourth pofind my iases one pint, ginger tw-j tablespoonsltil flour one quart; saleratus two leaspaons ful sour milk one cup. Melt ihe butter and laid, and whip in the sugar, molasses and ginger; dissolve the saleratus in the milk and put-in; then the flour, and if needed a little more flour, to enable you to roll out very thin; cut into stnail cakes and bak in a slow oven until enappish. Jloast Vent Season a breast of veal with pepper and salt; f-kewer the sweet bread firmly in its place. Hour the mea and roast slowly before a moderate fire for about four hours It should be of a fine brown, but not dry; baste it with butter. When done put the gravy in a stew pan. add a piece of butter rolled in browned flour, and it there should not. be quite enough gravy, add a little more water, with pepper and salt to taste. The gravy should be brown. J-!!;; Cike. Five eggs; one cup of sugar: a little nu meg; saleratus one teaspoon: sour milk two cups; flour. Deal Hie eir' sugar, and nuuueg together; dissolve the saleratus iu the milk, and mix; tli-n sur to flour only to make a thin batter, like pan cakes; three or four spoons of the ba'ler to a common round lin; bake in a quiek oven. Three or four of these thin cakes with jelly between, form one cake, the jelly being spread on while the cake is warm. Briskd of Ti'if Staffed. A p'ece weigh ing eiphl pounds nquires ab uit five of six hours to bo:l. .Milking a dressing ol bread crumbs, pepper, salt, sweet heibs. a little mace, and one onion chopped fine and mixed with an egg. I'm the dress ing in between the fat and the lean of the beef, and se.v it r.u t-iit; flour the cloth, sew the beef up tight in it. and boil it five or six hours. When it is done take the cloth off. and press it until it is cold. This is to be cut iu thin slices and eaten cold 2o Ice a Giue. For a good sized cake eight ounces of finely-p nvdered sugar. I "at it into a mortar with four spoonful of rose-water ard the whites of two egg beating and s'raiiiing it. Then whisk ii well, and when the cake is almost cold, dip a feather into the icing, and well cov.ir the cake with it. I'ut it into the oven to harden, ton tie careful not leave it there long enough to discolor it. and keep it iu a very dry place. Some per sons apply the icing with a knife, but care must be taken to lay it on evenly. TlullJJtif Ctke. Nice brown sugar one .md one half cups; three eggs; sweet skiin milk one tup; flour two cups or a liule more only; cream of tartar arid so da of each one teaspoon; lemon escence one teaspoon. Thoroughly beat the eggs and sugar together; mix the cream of tartar and soda with the milk, at the same time stirring in the flavor; remembering to bake soon; spreading thin upon a Ioiij; ati-J as soon as done spread jelly upon the top and roll up; slicing only as used; the jelly does not come iu contact with the lingers as iu the ll.it cakes. Sponge Coke xn'lh Soar Jliik Flour three eups; fine white sugar two cups; six eggs: sour milk, one lialf cup: sal eiatus one teaspoontul. Dissolve the sal era'us in the milk; beat leeggs sepa rately; sift the flour and sugar; first put the sugar into the eggs, then the Hour and stir all well together, using any fl ivur ing extract which you prefer, one tea spoon lemon, however, is the most, com mon. As soon as the Hour is stirred in. put it immediately in a quick oven;, arid if it is all put in a common squ ire bread pay. for which it makes the right amount, about twenty to thirty minutes to bake; if baked in small cakes proportion itely bs.s. Hou-ih and Tlenihj Ctke. Ilulter or lard one pound; molasses one quart; sola one ounce; milk or water fme-half pint; ground ginger one table -spoon; and a lit tie oil of lemon; flour sufficient. Mix up the ginger in Hour, and rub the butter or lard in also: tlis-olve the sod.i in the milk or wa'er; put in the molasses, and use the flour in which the ginirer and but ter is rubbed up. and i nflicient more to make the dough of a proper conscience to roli out : cut the cakes out with a long and narrow c liter, and wet the top with a little molasses and water, to remove the flour from the cake ; turn the top down into pulverized white sugar, and place in an oven sufficiently hot for bread, but keep them in i nly to bake, not dr' up. This and the 'Federal" are great favor ites in Pennsylvania, where they know what is srood. and have the means to make it; yet (hey are not expensive. 7W PorJ: Pot Ph. Boil a sparerib, after removing all the fat and crackling from the bones, un til tender, season with salt ami pepper; half an hour before the time for serving the dinner, thicken the gravy with a little Hour ; have ready another kettle, into which remove all the bones and most of the gravy, leaving only sufficient to cover the pot half an inch above the rim that rets on the stove; put in the crust; cover tight, and boil steadily twenty-live minutes. To prepare the crust, work into light dough a small bit of butter, roll it out thin, cut it iu small square cakes, and lay them on the moulding-hoard until very Ii'jht ; if made with brewers' yeast the butter should be melted in the wetting of the crust, and rolled out before rising, as the lirst cliVr veseuce of brewers' yeast is the strongest; work the "doti-h well before making no the cakes.
