A dozen or ft score of tea importers mny bo represented in the stock of tea which a firm of auctioneers otrer for salo on a given day. Two hundred or more diirerent grades of ton may be in the consignment. A sample chest, half chest, or pnekago of each grade is sent to the auction room for in$icctioii and sampling by prospective pur chasers. These tiro ranged in tiers ntwut the auction room so that their distinctive names and marks may le seen. All theso marks, and a queer lot of hieroglyphics they are, are reproduced in the catalogue, always largo leaved, and w ith plenty of room for notes alongside the description of each lot of a particular grade of tea. The lots vary from a single package or half chest up to jwrhnps a hundred packnges of the fragrant Oriental leaves. The small lots are usually particularly choice brands of tea, the largo ones the cheaper and "standard'" grades. The distinctive marks on these, chests aside from the Chinese figures are either figures or letters, sometimes standing alone, but oftencr inclosed in a circle, n square, a triangle, an ellipse, or some other geometrical figure, and occasionally accompanied by an anchor or some similar figure that is a symltol of no one knows what exactly. Onco in their places in the miction room, the sample chests are made ready for customers who wish to try the teas. And here is where tea auction sales differ from other auction sales. A pur chaser may try Iwforo he buys. To euablo him to try, big holes, an inch and a half or so in diameter, are cut through the chest and its wicker cover, so that the ten can easily bo reached. The sample packages thus pre pared, everything is ready for the sale. rnoKF.ssio.VAi. tea tastkus. For two days lieforo the salo young men with the big quarto catalogues and accom panied by a boy with small tin boxes visit tho auction rooms and take samples for test ing. Theso young men are usually profes sional tea tasters, and to tho casual visitor to an auction room their methods are eculiar, to say tho least. A wisp of tho split bamboo, such as tho network of matting that covers tho packages is made of, is tho sampler's weapon for attack on tho tw chests about him. His catalogue is held in his left hand. With tho right he thrusts his wisp of bamboo, doubled so as to make a sort of hoe, into the round hole in tho tea chest, and from the chest hauls a handful of tho tea on to tho catalogue pages. The eye serves to tell him if tho tea has been colored or bleached. That point settled, the necessary noto is mndo in his catalogue. Then comes tho preliminary tost. The tea is dumed from tho sampler's catalogue into his hand. Then, with tho bund partially closed, tho sampler blows vigorously into tho mass of leaves, and at onco allies tho leaves to his nose. Thus ho gets a fair idea of the aroma. As ho has no further uso for that particular sample, ho throws it into a trough which stands at tho foot of tho rows of chests, and which is put thero for tho express purpose of holding theso discarded samples and tho particles that do not fall on tho cataloguo pages when tho wisp of bamboo pulls tho sample from tho chest. And so tho sampler goes tho round of tho long row of tea chests, eyeing and smelling, and onco in a great while tasting a bit of tho tea, and ulways throwing away two or three K)Uiuls during tho course of his afternoon in spection. All tho observations of this oxiert as to color, aroma and quality aro noted in his catalogue. 801110 samples aro quickly dis posed of, and the sampler marks in his cata loguo tho valuo of the particular brand of tea ho has inspected. Hut there are some brands, usually of tho finer grades, that puzzle him. He is in doubt as to the actual valuo of the leaves ho bus looked at and smellcd of a half dozen tunes perhaps. So he instructs a youth whoa' rompanies him to "take a sample." This youngster, using tho same means as his companion has lcforohim, hauls a liberal sample from tho chest into ft tin box, which is duly marked and labeled with tho same hieroglyphics that aro in scribed on tho chest and in tho catalogue. A dozen samples may be taken in this way for tho expert's uso outsido of tho auction room. These collected, his work among tho sample chests is ended. 1 OETTI.NO THE FUI.I. FLAVOR. I Accompanied by the boy and his small tin boxes, the ejqwrt leaves tho auction room and goes to his ollico to finish his valuation of tho samples his boy carries. Seated at a pound tablo, which turns on its standard at tho slightest touch, ho finishes his work with a s)khh1 which is littlo less than mar volous. A dozen French china cups and a samovar, or urn, of hot water help him to do this. Leaves from tho sample tin boxes aro put in the china cups and treated to a bath of the boiling water from tho urn in tho center of the table. Thero is a prelimi nary suift nt tho aroma urising from each particular cup, and then a tasto just a sip to get tho flavor fully. This test settles tha valuation of tho tea in u moment, and tho ox pert marks in his catalogue what ho deems tho samples thus treated to bo worth. No one over disputes that valuation, for tho tea taster is in his line an autocrat, a despot whose decision no one dares question. Tho catalogue now marked is sent to the buyer of the hofo tho oxjiert represents, nnd with tho latter thero remains only tho purely .mechanical work of attending tho salo and buying, If bo can, at or below tho figures ifixed by tho expert at tho maximum valuo of dheteas. Tho auction salo itself is very liko any oilier trade sale. A hundred men sit about tho auction room iu front of tho glib tongued crier. Cataloguo and pencil in hand, tho .crowd of buyers aro a very quiet party, and Jet tho auctioneer muke all tho noise. A pencil or catalogue raised in the air for an instant goes for a bid. The thieves aro so well organized as to have regular depots whero stolen property is stowed, and per sons of influence can generally recover what thov have lost if they aro persistent enough. Tho two important factors iu raisin moking aro a suitable variety of grape and adryclimato one not subject to dews, fogs or rains for weeks while the fruit is drying. Though tho region of California "men tioned is not exempt from fogs and rains, yet they aro infrequent, and tho necessity of protection to the drying fruit is not ex perienced often enough to make that feat ure of tho work very burdensome. Tho variety of grape from which the raisins aro made is tho Muscat of Alex andria, which is better known to most of our readers as tho Malaga grapo of tho shops, which comes to us from Spain, packed in cork dust, in small casks. A white grape makes a raisin of better color than a red or dark 0110, though in Europe both red and black varieties are used to some extent. Iu Santa Clara county, Cal., whero tho temperature at tho drying sea son is not so high nor tho air so dry as more southern counties, the grapo growers have resorted to the use of dryers or evap orators and with success, and tho practice is extending; many tons of raisins were made thero in that manner last year. The method is to expose to the sun for a few days and then removo to tho evaporator and finish up with u slow heat. Vlck's Magazine. Shallow h'oricty Conversation. The com partment for ice should be so constructed that no food will come in contact with it. The refrigerators should be kept entirely for milk, tnitter and water, though sealed and air-tight canu even of salmon, lob ster, hum, etc., mny be kept in tho up per part without Hoiling the butter or milk, ami of course without nflecting tho water, unless one should be stupid enough to put them in tho water tank. It is bet ter for the plant and for the flowers cut that they be removed by scissors or a sharp knife than wrenched oil' with tho hand. It is far better if they nro kept for some time to change the water daily and clip the endB of the stems each time. Hare roses and valuable flowers should bo covered with paper and set in the ice box at night. A few drops of Oinmonia or a little salt in tho water is said to ma terially assist in keeping flowers fresh.
