GLafewJ AGRICULTURAL. Devoted to the Interests of and Stockmen. Fanners C'!ieee-Maklns. Tho following is from the pen of Frank D. Holmes, of OwiUotinii, Minn., out; of the most successful dairymen of that State: To mako gootl clieej-o it is necessary to have good milk to begin with, anil good milk cannot bo had from poor, half-fed cows. Thin it is necessary to feed tho cows liberally, have plenty of good water and good usage. Cows' hhould never bo run and worried by dogs. This injures milk for cheese making, Ono bad mess of milk may spoil a whole vilt of cheese. Caie and cleanliness, if the cows nre healthy and have proper food, will insure go milk always. It is unreasonable to oxpect a good ehcese-maker to turn a prime article of cheese out from poor milk. If a patron carries sour or tainted milk to tho factory, he must expect bad, sour cheese. Set the night's milk in the vats or cans ant cool to GO degrees, then mix with the morning's milk in tho mornintr, but don't use tho little skimmer. Leave the cream all in. After the milk is all in the vats, the heat may be started at once, and raised to about 82 or 81 tie greet), as to the condition of the cheese room. If we sot the milk below S2 tho rennet works too slow ; if set above 82 it works too fast, while the tempera ture is being raised. It should receive frequent stirrings to keep the cream lroni rising, and thus becoming par tially wasted or dr.iwn oil" from the whey. llio rennet should next bo added until the temperature stops rising; thou enough rennet should be stirred in and should be agitated at least tiiteen minutes, and coairulation should begin in about twenty minutes the stirring after the rennet is in to prevent tho cream fiom rising and waste. In a cool room, when the sur face cools quickly and there is a fall ing of the temperature of the milk, there will bo a thin cream on the sur fdeo; this will form a soft curd, which will stick to the vat and be very annoy ing. If you want a quick-curing cheese, more rennet should bo added than one to be cured slowly and kept some time. Ah a rule tho more rennet used the lower tho temperature should Ikj at which tho milk is set and the curd worked. After tho milk begins to thicken, a cloth should be spread over tho vat to keep tho surface warm. There should bo no raising of the tem perature after the rennet is added and tho milk comes to a standstill until tho curd is cut line. The curd should be cut as soon as it will break clean across tho linger when placed in it and raised gently upward; the early cut ting is very necessary ; tho clearest whey is always obtained by cutting early; tho whey runs from the curd much more readily when it is young and tender. This is the object of cut ting tho curd to get out the whey ; the curd should bo cut with both a hori zontal and perpendicular knife. Never let tho curd got tough and leathery cutting, as there is always more waste and not as fine n curd. Cut the curd very fine, the finer the better, as it ex pels the whey easier and more thor oughly and cooks more evenly, and geta an easier action of tho rennet. After tho cutting is done and the curd commences to settle, the heat may bo started atQiico.but not rapidly. If the action of the rennet is Mow, it is bettor to wait a few "minutes for the curd to harden a little. After the heat is turned on, gently stir the mass to keep tho curd from packing together and to keep a more evon temperature through tho vat; as tho heat rises the harder tho crust gets and tho less lia ble to injure tho curd ; but keep up this stirring till tho curd is heated up to 08 degrees or blood heat, where it should takont least ono hour after the heat is turned on. This temperature should bo kept until the curd is cooked, because tho action of the rennet is more perfect than at any other degree. Dcforo tho curd is dono cooking some of the whey may be drawn of, as it is inoro easy to handle the balance in tho vat. After tho curd is cooked which every cheese-maker is ablo to tell tho whey shoi.ld bo drawn oil' before the acid conies on. Many curds, by re maining in tho whey too long, make a 'Ogf.'.v, hard, sour cheese. This kind of cheese is not desirable, but is the kind of ehee-jo we get if tho acid comes on while in tho whey. Tho acid takes oil with tho whey tho finest part of the cheese. Then I would have the curd cooked before tho acid comes on, and bo sure and dip tho curd sweet, and if you havo u curd sink to drain on, so much the better, and if you do not have a curd mill, would salt all at once, as this keeps tho curd from pack ing. If you havo a curd mill lot it lie until acid corner on, only stir onco in a while to let the whole expose- to tho air; after tho acid comes on, grind and salt, and put to press at about 80 degrees, as at this heat you will get a good face, and press well together; let this etand twelve hours in tho press, then remove to tho curing room. First-class checso may be spoiled by having a poor room to cure it in, too cold or too hot. Seventy degrees to start with is about tho right tempera ture, thou after ten days a little cooler, say about (15 degrees. I had good re sults of curing in a day cellar at 05 degrees. Thoy euro slowly, but aro the better checso for it. Ono good cheese is worth three poor ones. Tim 1'iilted StateN Ahead. Agriculture is regarded aa tho 6olid foundation of a nation. Tho tillors of tho ho'iI aro industrious, healthy, Bober-minded, reliable in time of dan ger, simple and honest in their ieVH of pblitfcal questions. But it is prob able that it ie because thoy feed tho world that thoy are regarded as the rock upon which the great nations rest. Food in war or in days of peace is the first thing c'sential to existence and success, and the steady, liulustri otis class that is engaged in agricul turo is therefore regarded as the miist useful and valuable in the nation. The United States leads tho world in the amount that it produces in agriculture. JN'ot only in the aggregate of all in dustrios is tho United States far in ad vance, but in this single industry, that is looked upon as the most important in any nation, it far outranks all coun tries. In the comparatively brief space of one hundred years such vast areas in tins country have been brought under the plow that our har vest is now the greatest in tho world. And wh.it tremendous cilbrt and labor it has cost to bring virgin prairies under cultivation, to fell the forests for the plow, to fence, to put up barns, to put up dwelling., to sow and to reap. It represents the work of three generations of as laborious, as bold and as determined a clnss as ever lived. Much of the work was dono in the face of groat personal danger. Tho pioneers had not only to face hard work, 'but a sleepless and merciless savage. Against sudden massacre. against ambushed rifles, against the mielnight torch, the pioneer farmers built their log cabins, put up their fences and furrowed the soil and achieved a, result that puts tho United States far in advance of every other country in the world in regard to the amount it produces from the soil. Potato Culture. After careful study of tho causes of potato rot and means of prevention, Ontario Agricultural College sets forth the following rules : 1. As soon ns discovered, dig the po tatoes. Delay will allow it to spread to the stems and thence to the tubers. If it reaches these and damp weather comes, rot will certainly appear. 2. After digging, tho potatoes should be put in a cool, dry place, thus sur rounding them with conditions unfa vorable for the growth of tho fungus, if anv happens to be upon them. '5. Growing eaiiv varieties is worthy of consideration, so that they may ma ture before the season arrives when this parasite is likely to allbcttho crop. 1. All potato stalks m ailected lands, should bo gathered and binned, m a to destroy tho millions of spores which may bo upon them. i. l so none but good seed. It at all affected, reject them; and plant in well drained land. If the potatoes to bo used for seed have been taken from cellars where aflected one were kept, they are likely to have the microscopic spores on them and escape notice. It would be best to get seed from unaf fected districts. 5. It is scarcely neccsi n turernark hat it would be injudicious to plant potatoes in tho same field the following year, after a visitation of the "rot," in- isinueh as the ground may retain the germs of disease. t. Avoid planting iition heavy clav soil, but lurefer a light' and dry soil. 1 his presents tho fewest conditions suitable for the growth of tho fungus 8. Uecauso poultry is elaitned to pay largo profits in proportion to tho amounts inveotcd therein, it does not follow that all who venture in the poultry husinesH will get rich or inahe money. It requires capital to con duct great enterprises, and if lars?o amounts are expected large sums niiiit bo invested. It is a mistake to lead persons into tho belief that there aro enormous profits in poultry. But few persons have large sums invested, and a teht has never yet been made as to what could really bo acuomplished. Those who have succeeded know that it is tho man or woman, and npt al ways tho birds, that makes the success. Like any other business, ono must thoroughly understand it. Keeping a few lloeks of fowls, and venturing upon tno management oi inousanus, are different operations. A small (lock could bo well kept where thousands could not exist. Yet there aro no im possibilities, and as we progress in tho art of poultry raising, the business be comes easier and more perfectly un derstood. The prae.tiee of juitting milk warm from tho cow directly into tight cans and subjecting it to a warm atmos phere is roprehended by a medical au thority. Poisonous properties sulli cient to cause unpleasant symptoms are said to bo liable to arifo from so doing. Cool the milk before canning, and keep ul a cool temperature after ward. Give the pig what you feed tho worthless cur tho necessary append ago to so many farms. If the pigs aro fed what ho consumes, there will bo a gain on tho farm in many ways. There will bo one more fat hog for the family supply or for market. There will be peace, where with his presence there aro often wry tempers. Tho stock on tho farm is quieter and more easily controlled. .Substitute a pig for tho pup, and place yourself on a sure basis for profit. Some little interest has been excited by tho announcement of tho discovery of a now and remarkable variety of as paragus on tho fctceps of Akhul-Tokiz It haa not been botanically identified, but it is represented as growing per fectly wild, tho stalks being nearly as thick as a man's arm and attaining a height of fivo or six feet, so that ono of them is said to suilico ten Russian soldiers for a meal. If tho preference of experts for wild asparagus finds jtibtilication in this variety, and its llavor is described aa equal to that of the best European kinds, asparagus lovers may havo a good lime before them.
