All over the city oyster houses ;hTe heen put in or der for reopening; down at Fulton mar ket the wholesale dealers lure been ship ping the bivalve in great quantities to the Weat for the past fortnight, that they may be on, hand, in 11 the cities, en the opening day. The oysters thus sent over the country are opened by the dealers, carefully washed and packed in kegs and barrels. In this way thy ar sent even as far a California, Of course the handling detracts frvin their fresh nesk and flavor, and adds to be cost, but in no other way can the citizens of O.na- ha, of St Paul or Kalamazoo get his doz es 1 en raw. During the busy season, Say from-August 20 to October 15, nomo O firms in the city open 100,000 oysters a day. The average day's work for an ex p "ri enced opener" is 3500, although some exceptionally expert workman will pen 5000. These " openers" are paid $1.00 per 1000. TH OTTOR CROP AHD PftlbES, The dealers say there will not be so large a. crop as ujual this year, but the Quality will be let;er than last year. The favorite varieties of Blue Points. Shrewsbury and East Rivers are all in excellent condition. Many people have an idea that the largest oycters are the lieat and call for saddle rocks" in the belief that they are ordering the best th market affords. This is a great mis take. The small oyster haVe a finor flavor and are superseding the large ones among epicures. For delicacy of flavor the Blue Points stand at the head. They are grown on the South side of Long Island and will be sold at the beginning of the season at from $5 to $6 per liarrel and from $1.25 to $1.50 per basket, a basket holding about three pecks. Shrewsbury will 1 egin at from $6 to $8 per 1000 according to quality. These prices are about $1. higher thai; last year. As the aeason advances prices gererally rise. Six years ago no oysters were exported from this coun ry to Ei rope. The English preferred their na tives" to all athers although they have a tough, astringent and coppery taste to no accustomed to the taste of the Amer ican oysters. But gradually th Amer ican article has heen developed and now thousands of barrels are sent out from this port, the small varieties ljeing cho sen for that purpose- Another dozen, waiter, if you please! The procession never ends there during busiest business hours and by reason of the constant throng of pedestrians who crowd its side-walks the street-pedlers find it their Ut mar ket place and so line the curb wth their barrows and still more contract the space for passing teams. In consequence it is tolerably certain that each succeed iag horses or vehicle going north or south will tread upon or pass over the identi cal spot as the preceding one in th rame distance.
