Moul ton ilc Co., in discussing this ques tion, says that the commonly heard complaint, that fishy flavors are due | to the salt that may bo used, is eu- I tirelv without foundation, but pro ceeds through ignorance of condi tions and is the result of efforts at guessing the cause of the trouble. We think this is probably true; and a great many other complaints made, and especially the reasons for them, are similar guesses, without any real foundation in fact or ex perience. This is particularly the case with those very wise experts on the market, who annually inform us that dairy goods are “ showing frosty flavors.” If there has been any one proposition incontrovertibly estab lished by our experiment stations, it is that the freezing of milk or cream has no perceptible effect upon the quality of the resulting butter. This question of flavors in milk and its products, both those which are agreeable and those which are offensive, is a very intricate one. It is probably truo that the disa greeable Dave rs may have many sources, but it is our opinion that more frequently than otherwise the water used in washing milk utensils and butter is responsible for these defects in flavor. For example, Mr. DeWitt Goodrich, while carrying on some experiments ns creamery in structor, lust spring, discovered that water which had been standing in the tank over night imparted this disagreoable fishy odor to the but ter, whereas water direct from the well which supplied the tank did not impait any such flavor. The only reasonable explanation is that in some way the tank itself had be come infected with bacteria capable of producing this flavor, and it would be well worth the considera tion of butter makers who receive complaints of this character to lg,ok after the water receptacle and give it a thorough cleaning and disin fection with boiling water.— Hoard’s Dairyman.
