A new prowess for the refriger
ation of meat has rdently been
patented by a German) firm which
is vastly superior to the principle
of freezing the meat as^is at present
generally adopted. Aifrw days ago
a vessel arrived in tho .jM-rsey from
the R iw r Plate with aiconsignmeut
of meat which had bejfn preserved
by this new system. The treatment
of preservation is accomplished by
at, rilized air.
At tho port of
shipment, some bullocks and sheep
were placed in a special chamber,
the air of which wa» rubsquently
freed from all impurities by means
of a special process, hud the tem-
perature reduced to 30 degrees be
low freezing point. The chamber
was then -oaleil, aud ’ when opened
at Liverpool, after n voyage of
thirty-four days, the carcasses were
found to be in perfact condition.
A piece of meat was cut from one
animal and cooked, and when tasted
was found to fie' as Irish and as
savory as if it had only been killed
a few hours. There was a complete
absence of the peculiar taste which
is such a prominent characteristic
of the prevalent process of freezing
