Other wise, let the fruits fall where they may. Serve salads well-chilled on crisp salad greens. To keep color light, sprinkle bananas, apples and fresh pears with lemon juice. This also helps to preserve vitamin C which is vital to buoyant health. Almond Ice Cream Always a Treat Pink color and the delicious flavor of toasted almonds are the things that make this ice cream so extra special. The pink color comes from the maraschino cherry juice. "Almond Specialty Ice Cream" is a nice surprise. Almond Specialty Ice Cream 1 egg y cup syrup from maraschino cherries 1 cup top milk Vi cup sugar Few grains salt Few drops almond extract Few drops red food coloring Vt cup whipping cream Vi cup chopped maraschino cherries H cup chopped roasted unblanched almonds Separate egg and beat yolk. Add cherry syrup, top milk, sugar, salt, flavoring and food coloring. Pour into refrigerator tray and place in freezing compartment with control set at lowest temperature. When frozen, remove to chilled bowl and beat with rotary beater until smooth. Fold in stiffly beaten egg white, whipped ; cream, cherries and almonds. Return to freezing compartment and freeze until firm, stirring occasionally. When firm, reset temperature control to normal. Makes l'i pints. Old Favorite Plenty of sweet - tasting yams and sweet potatoes grown in our part of the country. They're prac tically a certainty on every holi day table. Simplest (and many think the very best) way with them is to scrub well and bake in hot oven or in aluminum foil in moderate oven. Fancier way is like this, for each A servings. Orange Candled Yams Wash 4 medium-size sweets or yams and boil in skins until ten der. Peel and cut in halves length wise. Place in buttered baking dish. Mix together 1 cup orange juice, 1 tablespoon grated orange peel, Vi cup sugar, 2 tablespoons melted butter. Pour over all. Bake 1 hour in .100 degree oven, basting occasionally. Ocean Perch Fillets Because ocean perch fillets arc so bland, many like to dress tnem ud in wavs like this: Line a well-oiled loaf pan with crumbs. Dredge 8 ocean perch fillets with flour and season with salt and pepper. Place two or three fillets in pan; top with slices of onion, then with iresn am or ininiy sliced dill Dickie and cover with sour cream. Repeat these layers until all the fillets are used, top ping with sour cream. Bake at 375 degrecsc for 25 to 30 minutes or until cream is a golden color. Un mold and sprinkle with chopped parsley.
