ThU Haddock fillet dish cuts
down on dishwashing because It
becomes a meal-all-in-one-dish
with the Insredients that go with
it. For the vegetables, bits of left
over vegetables may be used.
Haddock. Hire and Vegetables
Ingredients:
l'i cups of water
1 teaspoon salt
cup of uncooked white rice
1 pound haddock fillets I thawed
and cut into serving pieces)
3 tablespoons of mayonnaise
2 cups crushed corn flakes
lty or 2 cups cooked seasoned
mixed vegetHbles.
I tablespoons butter or
margarine
4 cup of water
i teaspoon of salt
Mi teaspoon of pepier
Method: Hut the 1'.? cups water,
I teaspoon salt and rice in a 2
quart saucepan and bring to a
vigorous boil. Turn the heat as
low as possible. Cover and leave
over this low heat 14 minutes. He
move saucepan from the heat but
keep the lid on 10 minutei.
While the rice cooks, spread both
sides of the hitddock fillets with
mayonnaise. Roll in corn flakes,
covering all sides. Spread the
cooked rice in one side of a
greased shallow baking dish.
Spread the cooked mixed vege
tables in the other side. Cut up
the butter or margarine and place
over the rice and vcsetables. Pour
the water over the rice and vege
tables. Arrange the fish fillets
over the top. Sprinkle with the
salt and pepper. Place the baking
dish in a pre-healed 500 deg. F.
oven for J5 minutes or until the
fish Is browned and flakes easily.
This recipe makes servings.

most indefinitely if refrigerated.

to use in puddings, cookies and
salads.

to know that there is now an ap-
i ricot nectar on the market that
has a non-nutritive sweetener
instead of sugar added. The
inectar comes in a 12-ounce can;
each ounce of this nectar contains
about 7 calories.

Cherry Cobbler

Chill Con Carne these days can be fixed in a simple way,
providing a typical and satisfying dish.

A popular mainstay for a Sat-
urday night supper is Chili Con
Carne, and with it a bowl of
crisp salad and simple dessert
make the menu complete.
A new version of chill in
ahort-cut method combines to
mato-vegetable soup mix and
caned red kidney beans.
In this recipe, ground beef and
onion are browned in n heavy
skillet. Then add boiling water,
the convenient 214 ounce package
of tomato vegetable soup mix
and chili powder and cook for 10
minutes. The last step in this
easy-do dish is to add two cans
of red kidney beans and simmer
for ten minutes to bubbling per
fection. For the authentic touch have
the meat ground coarsely. This
gives the dish texture.
Chili con carne is Ideal for
party menus. It is a great favorite
with teen-agers especially who
like to make "sloppy joes" by
pooning chill onto hamburger
rolls.
Chill Con Carne
I tablespoon bitter or cook
ing fat
1 onion, chopped
Vt pound ground beef
2Vt cups boiling water
1 package tomato vegetable
soup mix
Vi teaspoon chill powder
1 quart (2 Mb. cans) red kid
ney beans
Melt the butter or cooking fat
and add the chopped onion, and
(round beef. Cook until brown
Add boiling water, tomato vege
table soup mix and chili powder.
Cook for 10 minutes. Add the red
kidney beans and simmer for S
minutes.
Makes 4 to 8 servings.
In the cobbler realm, a family
favorite is a Cherry Cobbler, and
that's a dosser' easy for the Ore
gon country where so many of
the fine sour cherries canned are
produced.
Cherry Cobbler
1 19-oz. can soup cherries
1 tablespoon cornstarch
cup sugar
Few grains salt
i teaspoon almond flavoring
1 cup biscuit mix
1 tablespoon sugar

Topping cream, if desired
Combine cornstarch in a sauce-1
pan with cup sugar, then stir
in cherries, salt, and almond fla
voring. Cook over a low flame,
stirring all the time, until the
mixture thickens and turns clear.
Pour into B-inch square baking
pan. Make batter by stirring bis
cuit mix, sugar, milk and water
together until just combined. Dis
tribute batter over cherries by
spoonfuls. Bake at 400 for 30 min
utes. Serve upside down, if de
sired with vanilla ice cream or
whipped cream.

1 cup butter or margarine
Vi cup sugar
1 egg
Viteaspoo'.i grated lemon rind
2 cups sifted enriched flour
y teaspoon salt
1 cup shredded coconut,
finely chopped
Cream butter or margarine.
Add sugar and continue cream
ing until light and fluffy. Add
egg and lemor. rind. Beat well.
Sift together flour and salt. Stir
flour mixture into creamed mix
ture. Blend in coconut. Drop by
teaspoonfuls on ungreased baking
sheet. Bake in slow oven (32S F.)
until lightly browned around the
edges, about IS to 20 minutes.
Mskes about 6 dozen 2 -inch
cookies.
