of the weather. A bit of plan
ning and preparation in the cool
of the day means keeping work
at a minimum.
Take advantage of refreshing
Bartlett pears when preparing
meals and include them often.
When a meal looks as pretty as
a picture you will observe the
family eating with pleasure.
Let your prettiest pottery
serve as the background for a
Bartlett pear half. Section an
orange and cut it into bite size
pieces and combine with green
grapes. Serve this fruit to
gether with the juice, in the core
cavity of a pear half. Have the
pears ripe and chilled. Leave
on the skin of the pear for its
texture. Add a couple of crisp
cookies for a dessert that has a
real summer touch.
Bartletts combine with any of
the fresh fruits, berries or mel
ons that arc on the market now.
Combine them with fresh berries
and frosted grapes for a dessert
that will please the most dis
criminating gourmet.
Chilled pears make a success
ful dessert, too. Lemon custard
sauce with sliced pears is a flav
orful combination that makes a
perfect finish. Add chocolate
brownies for a complementary
flavor combination.
A melon ring, a pear half and
a wedge of lime adds up to a
dessert in a hurry refreshing,
colorful and tasty. Cheese and
crackers makes a good accomp
animent with this chilled fruit.

Rice and Meat Balls Easy-to-prepare main dish

Here are two main dishes, easy
to prepare, to gladden the heart
of a food budgeteer. The Quick
Rice and Meat Balls is a dish for
the whole family because it's so
lightly seasoned that small fry
will enjoy it. It call's for only
three-quarters pound of ground,
beef and serves four
The Browned Rice and Shrimp
dish is good enough for company
and inexpensive, too. When I
served it recently I added to the
menu a fresh Bartlett Pear Salad
on crisp greens with garlic
flavored homemade mayonnaise
and it was voted a good combin
ation. Both these recipes make won
derful last-minute dishes because
they're prepared with pre-cooked
rice a fine product for a busy
homemaker to keep on her gro
cery shelves.
Quick Rice and Meat Balls
Ingredients: -pound ground
beef, V teaspoon salt, dash of
pepper, 2 tablespoons bacon drip
pings or other fat, 2 tablespoons
chopped onion, 2 tablespoons
chopped green pepper, 1 eight
ounce caa tomato sauce. 1 cups
water, 1 cups packaged pre
cooked rice, Vi teaspoon salt.
Method: Mix beef with tea
spoon salt and pepper. Shape into
16 small balls you'll need
rounded tablespoon- of the b'eef
for each ball. Heat bacon drip
pings or other fat in a 10-inch
skillet. Add onion, green pepper,
and meat balls and cook over
moderate heat, ' turning . meat
balls, until browned on all sides.
Add tomato sauce, water, pre
cooked rice, and Vz teaspoon salt
and mix well. Bring quickly to a
boil, uncovered, - fluffing rice
gently once or twice with a fork.
(Do not stir). Cover and simmer
for 3 minutes. Remove from heat.
Let stand 10 minutes. Makes 4
servings.
Browned Rice With Shrimp '
. Ingredients: 4 tablespoons but
ter or margarine, cup coarsely
chopped' onion, 1 cups pack
aged pre-cooked rice, 1 teaspoon
salt, V cup thin green pepper
strips, 1 pound fresh shrimp
(cooked, shelled and de-veined),
2 cups cold water, 2 tablespoons
finely-cut parsley, Worcester
shire sause (if desired).
Method: Melt butter or marg
arine in 10-inch skillet over low
heat; add onion and brown light
y, stirring often, for several
minutes. Add rice, salt, and pep
per strips. Stirring often, brown
over moderately low heat for 3
to 5 minutes. Add cooked cleaned
shrimp and water. Bring to a boil
rapidly and simmer 5 minutes:
Cover and remove from heat. Let
stand S minutes. Sprinkle with
parsley and serve at once; pass
Worcestershire sause if desired.
Serves 4 generously.
Spice Up Chowder
Clam Chowder Conquest. For
a clam chowder that is a bit dif
ferent and certain to rate raves
from the family, try adding these
spices to a quart of your reg
ular chowder; V teaspoon
ground allspice and teaspoon
ground cloves together with a
dash of mace.
Creamed tuna is one of those
old stand-bys that can be whip
ped up at a moments notice.
Remember, too, it can be served
in numerous ways. It goes equal
ly well on top of toast, biscuits,
waffles, rice, noodles or baked
or mashed potatoes.
