Journal Salem, Oregon, Thursday, February 8, 1951 IFOOID SECTION SECTION Cupid and Bashful Beaus Love Pink Heaven Cake If you're giving a party on Valentine's Day remember that Cupid loves cake; and that most bashful beaus do, too. And if you, yourself, make a gorgeous Pink Heaven Cake, a downy fluff of pale pink and snowy white, as light and pretty as a Valentine, you'll be sure to please your man. A special occasion cake like this is made with superfine cake flour to insure tenderness, light ness and fine flavor. There are two layers put together with peppermint frosting. It's a lovely pink; and to match it, the batter for the lower layer of the cake is tinted pale pink, too, with a few drops of red coloring. Pink Heaven Cake Preparation: Have the short ening at a room temperature. Line bottom of 2 deep 8-inch layer pans with paper; grease. Start oven for moderate heat (375 degrees F.). Sift flour once before measuring. Lift by spoon fuls Into cup until piled high, then level off by drawing spa tula or straight knife across top. Do not pack or shake down. Measure Into sifter: 1 cups sifted cake flour 2Vi teaspoons double-acting baking pwoder teaspoon salt 1 "cup plus t tablespoons , sugar Measure Into mixing bowl: 'A cup shortening Measure into cup: Measure into cup: Milk (see below for amount) 1 teaspoon vanilla Have ready: 2 eggs, unbeaten With butter, margarine, or lard, use cup minus 1 table moon milk. With vegetable or any other shortening, use cup milk. To Mix: Stir shortening Just Rice Jambalaya Popular Indoor Or Outdoor Dish Pipe iambalaya. which like Kentucky burgoo, is particular lv adaDted to outdoor festivities, will make a wonderful dish for an around-the-fire Sunday night mimcr party this winter! The crowd will enjoy it served in large deep bowls for it is of the consistency of thick, thick soup, This jambalaya has been the "piece de resistance" at many a farmer s and stockman s luncn- eon in the deep south, where it is reputed to be the one dish with no leftovers in Bu7o of tne dowis This sturdy meat and rice com bination is excellent "every day" fare for a growing family, too. Young and old alike will ap preciate Its delicious flavor and its stick-to-the-riDs quality. Ingredients 1 cud uncooked rice 2 pounds pork or chicken (cut in small pieces) 1 bay leaf (small) Sprig parsley . 4 finely chopped onions 2 tablespoons fat 2 quarts meat stock or water Vi teaspoon tabasco sauce 1 tablespoon chili sauce Dash cayenne 2 teaspoons salt - or more to taste ...Method Cut the pork or chicken into mall pieces and brown in fat. Add chopped onions and cook until brown. Stir often and when meat is tender add meat stock or water, parsley, bay leaf and salt. Cook ten minutes. Shake rice slowly into boiling meat mixture. Cook over moderate heat until meat and rice are done. Stir carefully to prevent burning. Add cayenne, tabasco sauce and chili sauce. Serve hot in bowls. This will serve eight to ten. Note: It may be necessary to add a little more water to com- plete the cooking of rice and meat. The finished jambalaya should be just thin enough to serve In bowlj. to soften. Sift in dry ingredients. Add milk and mix until all four is dampened. Beat 300 strokes by hand, or 2 minutes In mixer (at low speed). Add eggs and beat 150 strokes by hand, or 1 min ute in mixer (at low speed). Count only actual beating strokes or beating time. Scrape bowl and spoon or beater often.) To Bake: Pour half of the bat ter into one prepared pan. Tint remaining bater desired shade of pink, using a few drops of red coloring; pour into other pan Bake in moderate oven -(375 degrees F.) 25 minutes, or un til done. Cool. Pink Heaven Peppermint Frosting Combine 2 unbeaten egg whites, 1 cups sugar, dash of salt, 'A cup water, and 2 tea spoons light corn syrup in top of double boiler. Beat with ro tary egg beater or electric mix er 1 minute, or until thoroughly mixed. Cook over I apidly boil ing water, beating constantly with rotary egg beater '(or at high speed of electric beater) minutes, or until frosting will stand in stiff peaks. Remove from boiling water. Add Vi teaspoon peppermint ex tract and 1 teaspoon vanilla; beat 1 minute, or until thick enough to spread. Tint a delicate shade-of pink with red coloring. Spread between layers and on top and sides of cake. Sprinkle top of frosted cake with multi colored candies. How to Do Magic With Food Stains Here's encouraging news for you about removing food stains from your family s clothes. You can do all sorts of magic with stained linens, cottons, wools and silks, if you remember to work from the back of the fabric, place a piece of absorbent cotton under the spot when possible, and fol low this guide: Fruit Saturate with glycerine for several hours. Glycerine can be purchased at your local drug store and is useful in loosening stains from many causes. Stretch fabric over bowl and pour boiling water through stain. Most effi cient temperature for the water is 150 F. If the stain is still stub born, use warm glycerine. Ice cream and cream Sponge with warm water. If stains re mains, use carbon tetrachloride and launder or use dry suds. Dry suds is made by whipping soap jelly with an egg beater to the consistency of shaving lather. Butter and substitutes Laun der in warm suds. Salad dressing Sponge with cool water. If necessary, when dry, sponge with carbon tetra chloride, but never near an open flame. Egg and meat juices Scrape off excess, then soak in cold water and launder. Mustard Saturate with warm glycerine, and wash the fabric in a solution of soap to which a small amount of alcohol has been added. Green vegetables Scrub with heavy suds, using brush. For white cottons use chlorine bleach. Coffee and chocolate Apply glycerine with a small sponge, let stand a few minutes, then launder or use dry suds. Don't attempt to treat stains on non-washable fabrics. You may completely ruin the entire garment. Instead, baste a white thread around the stain, pin on 8 Rose Tinted Drink For Valentine's Day Roses and hearts, sweet sym bols of sentiment, are the most widely chosen decorations for Valentine parties. An arrange ment of roses and cut out card board hearts, lace frilled, make a charming centerpiece for the table, whether you set a formal table or are having simple buf fet refreshments. For the latter, tiny sand wiches cut in heart and diamond shapes are attractive. Of course, delicious drinks are necessary to the success of any party. Ginger ale is always a refreshing bev erage to serve. Alone, or in com bination with orange juice, grape juice or other fruit juices, the tangy flavor of ginger ale appeals to all ages. Here's a drink, rose tinted and a tag stating its cause, and send the garment to be dry cleaned promptly. Ann Hansen, another member of the class, is attend ing junior high in Anchorage, Alaska, Arthur Beasley is going to Silverton junior high. Fred de Vries is planning to show his moving pictures of European countries to the pupils of the Pratum school. The date will be announced later. Any one in terested is invited to come.
